Digging stuffed peppers atm, made them for my parents and I for dinner and it went down very well. In the stuffing there was bulgur wheat, mushrooms, celery, red onions, chopped nuts, olives, spinach, peas, sauerkraut, herbs & seasoning. With a side of kale and more peas 🤗

...Mum requested baked kale, because she likes it crispy, but the oven was too hot and it all burnt 🙃 I need at least a days notice for kale crisps so I can make them in my dehydrator 😂 sooo we went with steamed for the second batch haha!

Not that you can see from this picture, but my hair goes down to my rear (hence “Vegan Rapunzel”) I often get asked at how I grew it so long/ maintain it. I started to let it grow long when it was at my shoulders and it probably took around 5 years to get down to where it is now (I’ve kept it this length for a couple years now). Well, I’m no expert but these are things that I have done/do...
~ I only wash it twice a week (or go longer if I can)
~ I don’t like to use products with harsh chemicals so I like to use @lush. I love that you can get naked (no packaging) shampoo and conditioner from there and they’re vegan & cruelty free 😍
~ Let it dry naturally and don’t use heat on it
~ I don’t over-brush it, usually just once a day
~ Trim it every few months, I cut mine myself and have for years. It’s easier and much cheaper than a hairdressers.
~ My hair lightens quite a bit in the summer and goes super blonde if I squeeze some lemon juice on it, which I like to do some years! ☀️🍋
~ I apply a small amount of oil to the ends a few times a week, or all over when it’s feeling dry. (I applied oil after this picture once I brushed it...😅)
~ Also, I have a healthy, “balanced” diet, packed full of nutrients and get plenty of healthy fats 😁👌🏼
It’s pretty low maintenance tbh, but boy does it get knotty if I don’t brush/ oil enough 🙃
But anyway I’m not saying everyone should have long hair or do what I do or think it’s the best look etc (I often get the urge to cut it all off or find myself admiring short cuts) but I just thought I’d post about it as many people ask 🤗

This initially wasn’t meant to be one of them “new year goals” type of posts, and I’m not one for long captions either. But the whole #SorryNotSorry thing got me thinking...
Last year I observed myself over time behaving in a way which wasn’t myself, I felt I had drifted from my true self and was often very unstable. Nearing the end of the year I sat myself down and decided to acknowledge my faults and key areas I wanted to work on. It was a tough time for me, I tried my best to not be disappointed that I let myself get to that stage, but to be proud that I wanted to make things better. I set off with daily meditation and reflecting, both which really helped.
One of the bad habits I wanted to change was swearing, which I felt really manifested and escalated my anger. I decided to actively do my best to not swear and not listen to music with heavy swearing (classic fm always whilst driving now 😎 #LoveIt#SorryNotSorry ) it is all still work in progress, I am constantly tested and pushed, however I feel I have still made (some) progress with my anger levels.
That was the first step for me and there are many more to come, but I shall take each one with care and caution, not rushing to be “perfect” but aim to be better than last week/month/year.
I’m going to continue my journey always trying to be true to myself and unapologetic for who I am.
I am sick of patching things over, ignoring aspects of myself that needs work/love.
I am not perfect, I have many flaws, but I am me. #SorryNotSorry -

Breakfast this morning was buckwheat porridge topped with fruit, homemade peanut butter and homemade apple & cinnamon granola with a drizzle of melted dark chocolate 😍 just perfect 👌🏼 now I’m cosied up by the fire with the cats, watching mediocre Christmas films with my parents 🙈
Simple baked banana oatmeal is one of my go-tos for breakfast. I made this by blending:
- 1 cup of oats
- 1 banana
- 1 tbls flax
- 1 tsp chia
- Spices (turmeric, black pepper, cayenne, cinnamon, ginger)
- Water (enough to blend smooth)
Then pop in a Pyrex and top with fruit, then bake til cakey 😏
I love how easy it is to make and there are so many different flavours you can try and experiment with 😛
Pancakes (your standard banana, oat ones with added ground flax) made in the oven, because sometimes I'm too lazy to get a saucepan out and stand over the stove 💁🏼 I enjoyed these with persimmon, banana, pomegranate and chocolate sauce.
The sauce was made with banana, cocoa, homemade peanut butter and a splash of water.
All zero waste ingredients, which means I bought them either unpackaged, or in packaging like paper/ card that can be recycled! 😋
Boycott that plastic food packaging 🙅🏼

When you fancy a baked potato and baked beans... without all the sugar and more veg 😋 super easy to make your own and have a more wholesome and healthier option. Even added some mushrooms and chopped red onions on the side 👌🏼 not the most aesthetic dish, but defo veryyy satisfying.
Also, sorry not sorry but I'm having pomegranate with everything atm, so expect to see it in a lot of my pics, sweet or savoury 🙄
Anyone else's freezer is full of frozen fruit and veg? This smoothie has pumpkin (big batch frozen from Halloween), pineapple, banana, orange and blackberries (picked and frozen a couple months back)
I'm all about not wasting food, so when I know I won't finish something when it's fresh I'll either freeze or dehydrate it! (Pree the dehydrated mango 👀)
Shoutout to @mylkman_uk too for the pineapple that was going spare at @vegannightsldn and let me eat a bunch and fill my jar to take home👌🏼🍍🍍
Buckwheat sprouts so well, I love it 😍😍 Sprouting is amazing, it increases nutrient absorption, makes foods easier to digest, decreases anti-nutrients and phytic acid 🤗
Also, I'm currently on a butternut squash hype atm... steamed or baked usually. What are some of your fav ways to eat butternut squash? I'm open to recipe recommendations 🌝
Off to see some sun tomorrow with my mum and brother on a last minute spontaneous trip to Menorca 😁💖 I'm most excited to go adventuring the shores and see what's hiding underwater 🏊🏼🐠 Also looking forward to seeing the fruit and veg selection, my brother and I love exploring supermarkets abroad and seeing what weird and wonderful things we can find 😋
