I picked up some #vitamine pills. I don't track my food very often, but in the days that I have I've never met the recommended daily amount. Let me know if you have any tips so that I can avoid adding a supplement.

1 14.5oz can #fireroastedtomatoes (I used @muirglen brand)
1 can water
1 small #sweetonion, roughly chopped
2 #garliccloves
1/2 - 1 T #whitemisopaste
1 T #harissa

Combine all ingredients in a small pot. Simmer, with the lid propped, on very low heat for 60 - 90 minutes, stirring occasionally. Blend using a stick or immersion blender. Optional: Return to heat and simmer for 15 - 30 minutes longer.

On the right:
#veggie #pasta bake!
#sauteed #mushrooms, #carrots, #celery,  and #greenpepper until soft. Added a jar of #garlic #tomatosauce and simmered for a bit. Put about a cup of #water in the #sauce jar and shook it up. Blended that with about half a cup of #cashews and added that to make the sauce creamy. Threw in a few handfuls of frozen #spinach.

Mixed up #glutenfree #penne with the sauce and spread it out in a 9x13. Topped with a combination of #panko and #nutritionalyeast. Baked at 400 F for probably about 10 minutes.

Diced some #potatoes and tossed them in a combination of #vegetablebroth, #turmeric and #saltandpepper. Roasted at 450 F until they were soft (maybe 30 mins, idk I didn’t set a timer). About half way through cooking I put a frozen @beyondmeat #burger on the baking sheet.

While that was cooking I made a simple #saladdressing. Blend in the #vitamix…

A few splashes of #balsamicvinegar
Enough water to blend it all

Tossed some #springmix and #shreddedcarrot with a bit of the #delicious #dressing.

I crisped some #leftover #onionrings in the oven for a few minutes before building my burger, which included…
#spicybrownmustard, spring mix, #dillpickles, onion rings and #bbqsauce.

Oh and I can't forget the #ketchup!

Yeah, it was ridiculously delicious.

1 tsp #turmeric 
1 tsp #ginger
1 tsp #macapowder
1 tsp #cinnamon
6 #peppercorns 
Put in the #vitamix and fill to the 6 cup mark with #water. Will fill two 1-quart #masonjars.

Used the mandolin to slice sweet onions thick. Separated the layers and coated with rice flour.

Dipped the onions in a batter made from #soymilk

Then dipped them in a combination of panko #garlicpowder #saltandpepper

Baked at 450°F for about 20 minutes

Started out by making a sauce using #onions #celery #carrot #basil #parsley #crushedtomatoes #italianseasoning and @beyondmeat ground beef substitute. Let that simmer for a while.

Made what I thought would be a #cheesesauce using #water #cashews #nutritionalyeast and #blackpepper. Turned out good, but it's just a cream sauce, not really cheesy at all.

I layered #tomatosauce #glutenfree #lasagnanoodles  #creamsauce and plenty of #frozenspinach. Baked it at 325° F for about an hour. Taste tested any approved by @tracy.j.meunier and she's not even #vegan!

#creamypasta is one of my favorite things, this was #sodelicious. Boiled up some #glutenfree #penne, stirred in a jar of #marinarasauce and then added a bit of this thick #cream that I made from blending #cashews #hemphearts and #water. Going #vegan has made me so much more creative, love trying new things.
