Okay, so this has been a loooonnnnggg time coming. I FINALLY went to the eye doctor today after 10 years of bad vision 🙈
And O.M.G. I almost broke down in tears driving home from my appointment today!😭 I can't even tell you the last time that I've been able to see clearly! I knew my eyes were bad, but not THIS bad! I mean, I can see freaking trees on the mountains now you guys!!!!!!!!!! I don't think I have ever been so excited in mah life than I am today!
Omg you guys! These are sooooo good! You seriously can't taste the difference between these and normal no bake cookies!
Here's the recipe: • 1 cup natural peanut butter (you can use regular peanut butter, but it will make the cookies reduced sugar instead of sugar free) • 1/2 - 3/4 cup honey *I used only 1/2 cup and it was just the right sweetness!* •1/2 cup coconut oil (or butter if you prefer)* I used coconut oil* •6 Tablespoons cocoa powder *I used unsweetened* •2 teaspoons vanilla •2¼ cups gluten-free quick oats *I used regular quick oats, so mine aren't gluten-free but taste just as good!* Optional- the recipe didn't call for unsweetened coconut flakes, but I had some laying around so I added 1/4 cup and it was like the icing on the cake 😅
Mix the first 4 ingredients into a saucepan and gently warm it up. I warmed it up just until the coconut oil melted.
Add in the vanilla and oats, and stir well. Line a cooking tray with aluminum foil, saran wrap, or was paper and drop by the spoonful!
