Marinated beef with spinach feta potatoes (used lotatoes to put a low carb spin on dinner), left out the balsamic cherry tomatoes as just don’t feel them tonight but will whizz them up to make a pasta sauce for Ruby in the weekend to go with some leftover fettuccine noodles we didn’t eat. Finished with crumbed feta and a drizzle of @casarinaldi Crema con “Aceto balsamic di Modena IGP’ that I picked up from @souschefnz We ALWAYS put this goodness of our steak. Epic dinner @myfoodbagnz 🙌🏼
Cobb salad you were so fine!! Cherry tomato, smashed avo, capsicum, cukes, pickles, salami and egg topped with a drizzle of blue cheese dressing, chipotle hot sauce and crumbled feta. Hump day lunch time perfection 👌🏼
Turkey, tomatoes and feta pesto fettuccine, made low carb for me buy giving Rubes the pasta (she’ll eat the rest of the pack over weekends for lunches, nothing goes to waste round these parts!), and I ate all the feta!! Also drizzled a little @acetaiamalpighi Prelibato that I got from @souschefnz over the top, added a little extra magic!! Now, off to write the other half a list of some goodies I want from Walmart! 😉
Seriously good salsa picante cauliflower spinach chicken enchilada casserole thing-y. Topped with sour cream, guac, cilantro & more hot sauce. Love it when a mish mash works out better than expected, but there’s no way this ain’t gonna burn twice 🔥🔥🙈
It really is that simple! While I’ve been home alone for the last 10 days, I set myself some goals and am so pleased with my progress!! I’ve eaten well, I’ve moved daily (and some!), I’ve been in bed most nights before 10, and I’ve kept wine to weekends! Using ‘I am stronger than my excuses!’ has certainly helped, as has a wee pep talk when my mind starts to wander. The mind is such a powerful thing!!
Gai Yang Chicken & summer vege rice - low carb-ified for moi with cauli rice. The corn serves as my good carb portion, and drizzled a some mayo mixed with tamari and ACV (yum!). Was so good @myfoodbagnz #eattherainbow
Amish salad (except I used all broccoli instead of adding cauli, and chorizo instead of bacon because both that and the broccoli needed to be eaten), with leftover best chicken wings ever with my fave chipotle @cholulahotsauce So good, but ate far too much!
Sometimes all my meals start to look a bit same-same. Not hard when you eat leftovers every day! Tonight we had chicken wings because I have half a kilo leftover from Friday. It’s just been Rubes and I here for the past 10 days, my other half has been swanning around Florida waiting on tomorrow and the first NASCAR race of the year, the Daytona 500! So our food has gone further than usual but that doesn’t mean it wasn’t delicious!! Seriously, these wings are the best I have ever cooked, EVER!! Dished up with loaded cauli ‘skins’, slaw and my fave, a hassle back sweet potato loaded with butter, sour cream and hot sauce. Oh, and let’s not forget that little pickle!! Sunday, you have been non stop from the get go and will definitely be bringing a week of content! Enjoy the rest of your Sunday evening lower hemisphere ⏬ 🌎
Leftovers are the best!! Leftover lasagnette (peas extracted), stuffed in a red capsicum and grilled with a slice of Swiss cheese topped with a little sour cream and my favourite chipotle hot sauce. Definitely a Sunday well spent, gonna bring a week of content over here! Hope y’all are the same!!
So Saturday night for us is usually a carb night for moi. I just didn’t feel like them today, but had totally planned on having the lasagne pasta in my dinner but didn’t. Nonetheless tonight’s dinner of lamb lasagnette was relish! Saved it from earlier in the week so I could enjoy the carbs. Oh well, here’s always next Sat and I’m really looking forward to what’s in my menu!! Happy weekend-ing peeps!!
My mantra right now is ‘I am stronger than my excuses’, it’s kinda like the 5 second rule, stop procrastinating whatever it is, and just do it!! The time passes anyway so you may as well make it count!
Dinner was deee-licious!! Chipotle cilantro lime (flat) meatballs, topped with cilantro lime aioli, partnered with a hassle back sweet ‘tater loaded with butter, sour cream & hot sauce and a side of cilantro slaw. So darned tasty and so pleased there’s plenty leftovers for lunch tomorrow!!
Valentines dinner was dee-licious thanks to @myfoodbagnz Churrasco beef with chimichurri and rice. Low carb-ified for moi by omitting the orange juice (added a little xtra olive oil and a cap full of apple cider vinegar), and swapped out my serve if jasmine rice for some cauli rice. Also added a little more olive oil to the chimichurri. Such a yummy dinner!!
