Happy Pancake Tuesday 🤣
Here is my go to recipe for American style Pancakes 😍
1 1/2 cups self raising flour
1 Tbsp baking powder
3 Tbsp caster sugar
Pinch of salt
1 1/2 cups non-dairy milk (I use soya)
3 Tbsp vegetable oil
100g Blueberries (optional)
Vegan spread for pan
Mix dry ingredients in a large bowl. Whisk in wet ingredients (fold in blueberries of using) and let rise for at least five minutes.
Melt a tbsp of vegan buttery spread in a large frying pan over medium heat.
Spoon the batter into the pan (I use an icecream scoop as a measure)and cook until the edges start to turn golden brown and bubbles appear on the top. (about 5 minutes or so). Flip pancakes and continue to cook until done, about 3 more minutes.
Serve with your favourote toppings!
