Ever tried Lablabi?? It’s a savory breakfast soup with Tunisian origin and it’s what we (@dnc_uwb) helped make this morning at the Dane County Farmers Market! What’s in it you ask?? The base is a seasoned chickpea & broth soup and there was an assortment of toppings to choose from, so naturally I got the works😜

It’s FriYAY, FriYAY, gotta get down on FriYAY🎉 Especially when I’ve got this homemade SAMOA LATTE I’m about to share with you!!🍪☕️ Seriously dudes, the Girl Scouts invented the most magical cookie of all time and I just turned it into a caffeinated beverage because I had a 7:45am lab this morning and... ‘nuff said. Here’s the DEETS:

Ingredients:
• 8 oz fresh brewed coffee (I used a @cariboucoffee Keurig pod😋)
•1 date (make sure there’s no pit!)
•2 tbsp coconut shreds (or replace half with 1 tsp coconut oil for less pulpy consistency)
•1/4 cup unsweetened vanilla almond milk
•1 tbsp cocoa powder
•1 scoop @furtherfoods collagen peptides
•••
1. Process the date in a single-serve blender (like a Ninja or Magic Bullet) until roughly chopped up 
2. Add coconut shreds and process 10 more seconds
3. Add the rest of the ingredients and BLEND AWAY💃🏻
4. Best served in a cute mug and under a cozy blanket bc #hygge

Had a major hankering for some kitchen experimentation this morning, which led me to this wonderful Chocolate Peanut Butter Hummus😋 Because cozy, snowy Sundays are where it’s at, amirite??😌❄️ (And I may or may not be procrastinating my first assignment of the semester...) This recipe is as simple as can be, so I’m posting it below for easy access👇🏻 Enjoy this dip as a snack or a feel-good dessert!

Recipe:
•1 15 oz. can chickpeas
•1/4 cup + 2 T (6 T total) natural peanut butter (I use @smuckersbrand natural creamy!)
•2 T honey
•2 T cocoa powder
•2-3 T skim or unsweetened almond milk
Directions:
1. Drain and rinse your can of chickpeas WELL
2. Add chickpeas to a food processor and blend until crumbly
3. Add the rest of the ingredients and blend until smooth consistency (add milk in 1 T increments until desired thickness)
4. Enjoy with apple slices, graham crackers, or by the spoonful!🍫🥜

But more importantly, happy Sunday😌 I’m enjoying this weekend at the cabin with my fam, which includes an ideal Sunday morning breakfast • choco chip whole wheat pancakes (one w/ PB + banana & one w/ plain ole maple syrup, recipe from @skinnytaste) + a large mug of coffee • The high today in the northwoods of Wisconsin is -6, so we intend to cozy up by the fire and read alllll day☺️

I’m also taking some time today to reflect on the past year and think about the coming new year. As I scroll through IG and see what other people have been saying about their New Years plans, I’m so pleasantly surprised to see more of a shift towards “intentions” rather than “resolutions.” The notion of “new year, new me!” is fading out, and more subtle, attainable goals are being made for the new year👌🏻 No Whole30 or cleanse/sugar detox for me... I’m hoping to create some new mindful habits - a few of my faves below🤓
•Schedule friend dates at least once a week (over brunch, coffee, etc.)
•Listen to a podcast/watch a new TED talk each week (recommendations PLS)
•Start my @52lists journal (& stick with it)
•Remember to wish people a happy bday

Ladies and gents I introduce to you... the holiday hangover omelet!!❤️💚 My dad and I seem to make these every morning after Thanksgiving, Christmas, etc. so it only seemed appropriate to finally coin the term😏 Basically, you just take leftovers from the day/night before and throw ‘em into a skillet!🍳 Perfect for curing the post-holiday sads, sugar hangovers, and maybe even a real hangover if ya need it😉

• Chocolate Banana Nut protein balls • These babies are paleo, high-protein, and so rich and fudgey😋 They’re perf for a post-workout snack or high-protein dessert, and I made them using just one bowl, a microwave, a fork, and my hands! Recipe below🤗

My favorite thing about @rootznutrition post-workout protein blend (besides the fact that it’s made with wholesome, real ingredients) is that it comes in the most delicious Chocolate Banana Nut flavor😋 I’ve been wanting to make a recipe like this for a while because chocolate + banana + peanut butter is my go-to combo! But I gave it a little twist and used almond butter instead since Rootz products are paleo👌🏻

•2 scoops (~1/2 cup) Rootz chocolate banana nut protein powder (use code GOODVIBESBETTERFOOD for 10% off!)
•1/2 cup natural almond butter
•1/3 cup honey
•1 T chia seeds
•2 T Enjoy Life mini chocolate chips
•3 T freeze dried banana slices (crunched/crumbled)

1. Gently melt the almond butter and honey in a microwaveable bowl and stir them together (this will help when you add the dry ingredients)
2. Add protein powder one scoop at a time, mixing each one in immediately with a fork
3. Once a thick, dough-like mixture forms, add in the chia seeds, choco chips, and banana slices (I bought mine at Trader Joe’s and crunched them up in a plastic baggy, the texture is similar to Lucky Charms marshmallows😍)
4. Use your hands to roll them up into balls! I made 15 from the recipe, but you could get between 12-16 depending on how big you want them😊
5. Enjoy!! And try to keep them away from your roommates😏
