Is it really Saint Patrick’s day without a Ruben? ☘️
•Deconstructed Ruben with sliced corned beef, Swiss cheese,sauerkraut and thousands island dressing. I’m a lazy bun who layers it and throws it in the microwave.
Met up with my aunt for lunch and to catch up. I got a Santa Fe salad with blacked chicken. I had them hold the tortilla strips but I ate the corn. Corn has always been one of my favorite foods. It’s nice to have on occasion. It’s not enough carbs for me to really care about today 🤷🏻♀️
Changing it up from my usually. Got a # 5 the Vito for late lunch / early supper. I went grocery shopping today but was too lazy to cook. After tomorrow’s already planned lunch date I’m going to try to not eat out the rest of the month. Just a personal goal to save a little 💵💰
Real talk for a moment. Body dysmorphia can strike at any time. Some days I love the skin I’m in and think I’m beautiful. Other days I rip myself to shreds. I haven’t been kind to myself the past couple of days. We’ve taken a lot of pictures and I find myself picking out my flaws and judging myself mercilessly. I want to unconditionally love myself, I want to always be confident and just enjoy life. Sometimes it’s hard to shut that part of your brain off. No matter how much weight I lose or how much progress I’ve made I still have days like this. Knowing and accepting that is important. Taking a step back and realizing it’s a monster in my head talking and not the truth is an important step to recovery. It is a never ending journey but I know I’m so much more than the negative thoughts I have 💜
It’s so nice to have a full kitchen in the cabin. Swipe if you want to see it. Made my go to of peppers, onions and sausages for supper. It’s relaxing to just laze around without any commitment. Tomorrow we are going to do some hiking. It’s absolutely beautiful here.
Egg bake fresh out of the oven
•1 lb sausage browned
•cooked down 1 bag of spinach •layered in the bottom of a greased baking dish
•sprinkled mozzarella on top (like a small hand full)
•whisked 6 eggs and a splash of cream, poured on top of the meat and veggies, gave it a slight mix and topped with the rest of the bag of cheese (roughly another handful)
•bake at 350 for 30 minutes
Another day another salad. Today’s is from Chipotle. Full disclosure I got black beans today. I’ll still be under 50 total carbs for my day. I’m fine with not having perfect macros every day. Everyone’s journey is different.
