Strawberry Raspberry Nice Cream Slices ๐Ÿ“ 
Recipe 
Ingredients: 
1 cup strawberries 
1 cup raspberries
1/2 cup coconut cream 
2 tbsp coconut oil 
1/4 cup tahini paste 
1 tpsp rice syrop 
1/2 tsp vanilla extact 
Method: 
Add all the ingredients into a blender and pulse until creamy and smooth. Pour into small square cake tin lined with parchment paper. Place in a freezer for at least 3 hours or overnight. Once set, cut into small bars, serve and enjoy immediately.

Purple Cauliflower Veggie Fritters ๐Ÿฅ•
Recipe 
Ingredients:
1/4 white cauliflower, trimmed, cut into florets
1/4 purple cauliflower, trimmed, cut into florets
1 carrot, grated 
1 garlic clove, minced 
1 egg or flax-seed egg 
3 tbsp all-purpose flour 
1 small bunch fresh cilantro, chopped 
1/2 tsp ground cumin 
1/2 tsp cayenne pepper 
Method: 
Add all the ingredients into a blender or food processor and pulse until combined and a thick paste formed. Heat oil in a frying pan over medium heat. Form fritters with your hands and cook on both sides until golden brown. Serve warm and enjoy.

Recipe
Ingredients: 
4 sweet potatoes
1 small broccoli head, steams removed 
100g cashew cheese (see the recipe on my previous post) 
fresh cilantro
salt and pepper to taste 
Method 
Preheat oven to 200ยฐC. Halve sweet potatoes lengthwise and poke them with fork. Cover with paper towel and microwave for 10 minutes. Let cool and scoop out flesh from centre leaving a 1cm thick shell. Place on a baking tray lined with parchment paper, spray with oil and bake for 12 minutes. Finally chop broccoli florets. Mash sweet potato flesh and place into a bowl. Add broccoli and cashew cheese. Add oil, season and mix well. Fill sweet potato shells with mixture. Bake for 25 minutes or until golden brown. 
Serve warm with fresh cilantro and enjoy.

I just love love love this Maple Sriracha tofu and veggie bowl ๐Ÿ’› Looks so yummy ๐Ÿ˜ Made by lovely @thebirdfeednyc ๐Ÿ’– 
Recipe: 
forbidden rice, avocado, edamame, maple Sriracha baked tofu, kimchi, carrot & purple cabbage
Maple Sriracha Baked Tofu
โ€ข 1 block of extra firm tofu (12-15 oz)
โ€ข 2 tbsp. Sriracha sauce
โ€ข 2 tbsp. reduced sodium soy sauce
โ€ข 2 tbsp. maple syrup
โ€ข 1/8 tsp. garlic powder
โ€ข 1/2 tsp. sesame oil
- Press tofu & cut into 1 inch cubes.
- Mix Sriracha, soy sauce, maple syrup, garlic powder and sesame oil.
- Marinate tofu in sauce for 30 minutes, reserving a few spoonfuls of marinade to add halfway through cooking.
- While tofu marinates, preheat oven to 400F
- Line a baking sheet with parchment paper and spread the tofu pieces evenly on the pan.
- Bake for 15 minutes.
- Remove from oven, turn tofu pieces over and cover in the reserved marinade.
- Bake for another 10-15 minutes or until the edges are crispy.

Yay or Nay ? 
Recipe 
Ingredients: 
1/2 cup raw almonds 
1 medium carrot, grated 
1/2 cup raisins 
1/2 cup dry cranberries 
1 cup desiccated coconut 
1 tsp cinnamon 
1 tsp nutmeg 
Method: 
Add everything to a food processor and pulse for 2-3 mins until the mixture comes together and forms a sticky paste. Roll about 2 tablespoons of the mixture into balls. Roll in extra desiccated coconut to coat. Refrigerate for 30 mins and enjoy.
