So it’s almost 4 am and I’m almost done eating this tart I just made. So lately I’ve been watching this British baking show and it’s inspired me a lot and just given me a lot of ideas. I don’t know a lot about pastry or bread and I wanna get better so I’m just always learning new things by watching this show.
So this is a lemon curd poached Asian pear tart. The dough is a pate brisee. Which is a flakey savory dough but u can use it for sweet pastry obviously. The custard is just flavored with lemon zest and juice. The Asian pears are poached in a sweet white wine with some star anise, all spice, cinnamon, and sugar obviously. The canelle is a whipped cream flavored with vanilla Greek yogurt, mint, powdered sugar, lemon juice and orange extract. And lastly the candied lemon zest is homemade as well.
