Meet Mike. He's the owner and roaster of Guilder Coffee Roasters in Portland.
On the day I was leaving Portland, my friend couldn't take me to the airport, because he and his sister had to drive up to Washington. So he dropped me off somewhere I could chill for a bit before taking the MAX to the airport. "I'll take you to one of the best coffee places here in Portland. I've talked to the guy who runs it, and he's pretty cool. I think you'll like it." Sure enough, he was right.
Mike is pretty laid back and chill. And when it comes to coffee, he knows what he's doing. Originally from Oregon, he spent time in other areas of the country and the world learning about coffee.
Guilder is located in Portland, east of the river. Its cafe interior is inspired by Scandinavian design. Mike studied a few years in Sweden and took what he learned to Portland. He also does the roasting, and serves coffee from Guatemala, Honduras, and Brazil to name a few.

Meet Emily. She is a barista at Insomnia Coffee in Hillsboro, and also works at REI...coffee and adventure, right? She got involved with specialty coffee 3 years ago at Street Bean Coffee Roasters in Seattle, a non-profit organization that works with street involved young people. She worked there as a barista and trainer. ▫
In August, Emily left @streetbeancoffeeroasters and moved back to her hometown to work at @insomniacoffee. ▫
She always loved and enjoyed specialty coffee, and got involved with it because someone at Street Bean Coffee Roasters knew she wanted to be more involved with it and invited her to join. Pour overs and espressos are her favorite to drink, but she enjoys making lattes, which allow her to experiment. Her latte art is pretty neat too. ▫
Emily wants to be remembered as someone who is simply kind and funny, and she encourages people to do hard things. "It's always a challenge. Does it scare you? Is it difficult? Do you need to have a conversation? If so, then maybe you need to do it." A particularly difficult thing she does is working in coffee and retail because she's a pretty high-introvert. To constantly approach people and converse can sometimes be difficult for her. The caveat to it being difficult is her knowing that being an introvert is not a bad thing, and she uses that to find a balance. As is the case with most introverts, she prefers a few deep relationships than a lot of surface ones. ▫
She also encourages people that to be the best you can be is by being yourself, because that's what the world needs. And once you can do that, you'll have a little more peace in your life, maybe.
Meet Kim. She's a barista at Dapper & Wise Roasters--the South East Division shop. She's originally from Saint Louis, Missouri, but on a trip to Portland one summer, she fell in love with the city that she packed her car and moved there.
While in Missouri, she worked at Starbucks for four years. She brought her coffee knowledge and experience to work with specialty coffee at Dapper and Wise Roasters. "There is really good coffee here." Her favorite roast is the one they are serving now. It's an Ethiopian natural wash: Ethiopia Reko Koba. She enjoys the fruituer coffee because they're usually full of surprises. From our short conversation, her excitement of surprises makes sense, it fits her personality.
Kim likes to work with coffee because she likes connecting with people. In Missouri, she was studying to become a teacher because she also likes to work with kids. She's currently continuing her education here also. "Figuring out what you want to do forever is not the easiest task." She's learning to take things day by day instead of planning for the future.

Meet Shawn. He's a manager in training at Caffe Frascati in downtown San Jose. He's been here since the end of September, but has been pulling shots and pouring coffee for a few years now. He is originally from San Jose and is aspiring to be a model or an artist of some sort on the side.
He is not a fan of espresso, an his favorite coffee is the house drip. When asked about it, he describes the dark roast drip as an experience almost like drinking a dark chocolate. Some words he lives by is: follow your dreams. #caffefrascati
