Chocolate Avocado Chia Pudding via theironyou.com!
Serves 4
Ingredients:
2 very ripe avocados
⅓ cup / 4 oz / 113 gr @atacorawellness raw African honey (or maple syrup)
⅓ cup / 1.4 oz / 40 gr cocoa powder 
3 tablespoons extra virgin coconut oil
2 tablespoons @atacorawellness baobab powder
1 teaspoon vanilla extract
½ teaspoon chia seeds, ground
Directions:
Combine all ingredients in a blender and blend until smooth and silky. You might need to stop the blender and mix with a spoon to make the blending easier.
Divide pudding among ramekins/cups and refrigerate for at least 30 minutes before serving (this allows the chia to thicken). Sprinkle with chopped almonds, walnuts, cocoa nibs or top with some whipped coconut cream or vegan yogurt before serving.

Fonio Tabbouleh via emisscooking.com!
Serves: 2 people
Ingredients:
100g of @atacorawellness fonio 
100g of peas 
1 zucchini 
1 bunch of fresh coriander and 1 fresh mint 
1/2 lemon 
2 tbsp olive oil 
3 drops Tabasco 
3 eggs 
salt and pepper
Method:
Rinse the fonio using a strainer with very fine mesh. In a saucepan, put fonio and 2½ times its volume in water, bring to boil, cook over low heat 10 minutes, then let remove from heat and let swell for 5 minutes.
Cook the peas in water for about 20 minutes, let them cool. Wash and grate zucchini. Rinse the herbs. In a salad bowl, prepare the vinaigrette with the lemon juice, the tabasco, the olive oil, the salt and the pepper. Add the cooked fonio, the peas, the zucchini and the chopped herbs. Mix well.
In a bowl beat the eggs, season them, pour them into a warm, lightly oiled pan and cook for a few minutes. When the eggs are cooked, roll the omelet gently in order to obtain a roll. Slice the omelette and arrange it still warm on the tabbouleh. Serve immediately.

1 cup yogurt of choice

These vegan #baobab blueberry muffins were so amazing that they required an EXTREME closeup!
Full recipe below...
Ingredients:
1 3/4 cups whole wheat pastry flour
2-3 tbsp @atacorawellness baobab powder (learn more about his amazing superfruit on our site - link up in bio⬆️)
2½ tsp baking powder
¼ tsp baking soda
½ tsp salt
½ cup + 2 tbsp granulated sugar of choice (we used coconut sugar)
1 cup soy milk
1 tsp apple cider vinegar
¼ cup + 2 tbsp sunflower oil/coconut oil or canola oil (we have even successfully made these with applesauce instead of oil!)
1 tsp vanilla extract
zest of 1 lemon
1½ cups fresh blueberries
Method:
Preheat the oven to 375F. Line a muffin tin with baking cups.
Because these are egg free you will need to curdle the milk. Combine the soy milk & apple cider vinegar in small bowl and allow to sit until curdled.
Next combine the flour, baobab power, baking soda, salt and baking powder in a large bowl.
In a separate bowl mix together the sugar, oil/applesauce, vanilla & lemon zest. Stir the curdled milk into the sugar mixture until combined. Slowly stir in the dry ingredients making sure not to over mix.
Lastly, fold in the blueberries and then fill each muffin cup about 3/4 of the way to the top. Bake in the preheated oven for 20-25 minutes until a toothpick comes out of the center clean.
Allow muffins to cool before removing them from the pan. Enjoy!

½ cup light coconut milk (from a can)
2 tablespoons @atacorawellness baobab powder
½ cup raspberries
5 strawberries, hulled
1 beet, chopped
½ banana
Toppings:
¼ cup blueberries
2 tablespoons unsweetened coconut flakes
1 tablespoon chopped almonds
1 teaspoon chia seeds
Instructions:
Blend all smoothie ingredients (spinach through banana).
Pour into a bowl and top with blueberries, coconut flakes, almonds, and chia seeds.
