Often I have oatmeal in the morning but switching it up today with this BLUEBERRY CHIA SEED PUDDING 💙 Much like overnight oats you let it chill in the refrigerator through the night, then in the morning top with fresh blueberries. Most of the time you will find chia pudding recipes that use whole chia seeds but I like it smooth. So my recipe uses ground chia seeds. RECIPE 👇 Makes 4 cups:
In a blender: 2 cups almond milk (or milk of your choosing), 1 cup fresh blueberries, 2 tablespoons honey (optional, if vegan substitute for maple syrup), 1/4 teaspoon ground cinnamon, 1/4 teaspoon pure vanilla extract. Blend all together then in a bowl mix into 1 1/2 cups ground chia seeds. Refrigerate overnight in bowl or mason jars - top with fresh blueberries in the morning.
