Besides the fact that the wine is complex in nature (syrah, merlot, cabernet sauvignon mix) it is also complicated to produce considering the geographical location. However, to taste, it's marvellous. 2006, 2008, 2011, 2012, 2013 in the wine fridge to sit back and relax.

It can be aged anywhere from 2 weeks to 4 months, at its early age is chalky, moisty & fresh with delicate aromas, as it loses moisture, the cheese becomes drier & more intense displaying nutty 🥜 & peppery flavors. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ 🐐 The Loire Valley is well known for producing some of the finest goat cheeses in the world. Every 2 years during the month of June, in the city of Sainte Maure de Turenne, more than 500 👩🌾 gather together to compete for a prestigious cheese award. 🥇~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ 🐐 Goat herding culture & cheese making knowledge was probably the best thing left behind by the invasion of the Saracens from North Africa around the year 700 A.D. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ 🍷 This organic, hand-harvested, dry-white wine from @domaine_gayda in Languedoc-Roussillon (🇫🇷 Mediterranean coast) is called “flying solo” 2016 in honor to the Aeropostale pilots that risked their lives to deliver mail in the 20’s. 💌~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ It is made out of 🍇 85% Grenache Blanc & 15% Viognier grapes. This is an enjoyable “great value for money”, food-friendly, every day & aperitif wine. It has 🌸 & grapefruit aromas with a fresh delicious green apple & pear flavors. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ 👅💦The acidity of the wine pairs perfectly with the acidity of the Crottin de Chavignol dissolving it nicely & refreshing the palate at every bite. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ 🧀 🍞 Goat cheeses pair deliciously with the crunchiness of hazelnuts & the sweetness of the raisins in this sourdough whole wheat bread.
Starting the day at #Prowein2018 with a WSET masterclass - three Australian Semillons on tasting: Hunter Valley vs. Barossa Valley vs. Margaret River. Even though I’m lucky and get to drink these Aussie wines all the time (living in Australia), it’s lovely to soak up the knowledge from an experienced WSET scholar for sure! About time I do my WSET too I think 🤓🍷🍷

Dish: Cured salmon, cucumber, cucumber and lemon base and pearls.
A really nice chablis showing jaw-tingling acidity and structure. When properly, Chablis are always a joy to drink, young or old! This is one to try.
(As for the dish, i was expecting to have a green base and green perls. Disappointment here. Will learn and inprove!)
