Lactose Intolerance is on the rising high in our country. Studies show that less than 18% of the Indian population have Lactose tolerance. The rest cannot absorb milk easily. Lactose intolerance occurs when the small intestine does not produce enough lactase. Lactase is required to digest lactose present in the milk & milk products.

This was honestly one of the best and easiest salads I’ve made! Used chickpeas, 5 cherry tomatoes, a whole avocado and half a cucumber. For the dressing I mixed a small amount of olive oil, a tea spoon of djon mustard, a clove of grated garlic, garlic pepper, oregano, salt and a half a lime. Topped it up with feta cheese and fresh parsley. 🥗

Yesterday, while I was in Hyderabad, i had the opportunity to have this beautiful pizza from @pizzamania around 2 AM because #postmidnightcravings. Anyways, i have lately developed liking for traditionally oven baked, thin crust pizzas since there are alot of italian food places around karachi serving them but this one was quite the usual thick crust oven pizza. Generously topped, it was piping hot upon being delivered and baked perfectly!
If you are in Hyderabad and are looking for late night food, this tiny place in latifabad is opened up all night to serve you fresh, hot, yummy pizzas. 😍 
ps: They only operate on deliveries and take away. 😏

The Ragi & Samai Uthappams turned out amazing than what I expected them to be. Last few weeks I have been tweaking the recipe to get the perfect crispy dosas out of these experimental millets. I find millets pretty hard to consume otherwise, hence incorporate them in these forms.. .

1 cup Finger Millets (Ragi)
1 cup Little Millets (Samai)
3/4 cup whole Urad Dal
2-3 teaspoons Fenugreek Seeds
Salt to taste
- Wash and soak the Ragi, Samai, Urad Dal, Fenugreek Seeds in enough water overnight.
- Grind them into smooth fluffy batter, adding little water at a time.
- Take it out in a bowl, season with salt, whisk it nicely and leave it to ferment for 7-8 hours.
- The batter is now ready to make the dosa’s or Uthappam’s with your preferred toppings. .

These are #Glutenfree and #Vegan and makes for a lovely crispy dosa’s, fills you up in no time and are so so #healthy . .

Aujourd'hui j'ai renoué avec un plat de mon enfance... ou plutôt de mes années estudiantines. 
Quand j'avais la flemme de cuisiner, j'achetais des #quenelles en boîte de conserve. Humm... je trouvais ça trop bon alors que la plupart des gens trouvent ça plutôt... fade.
C'est cette même texture que j'ai voulu retrouver. 
Dixit la volaille ou le brochet! Place au fait-maison, avec comme base de la semoule de blé. Une recette simple et rapide (comme toujours!), inspirée de @lafeestephanie. 
Et en accompagnement une sauce tomate express aux champignons 🍄 et poivrons 🌶.
Une très belle alternative à notre spaghetti bolognaise du lundi!
Verdict: sur 13 quenelles, mon fils en a dévoré 8 à lui tout seul! 😍😍😍 Just cooked #dumplings in memory of my student years. I used to buy some tins of those the days I was too lazy to cook. I just loved the texture while most of people don't really like it.
Mine are made of wheat semolina with a tomatoe sauce (with mushrooms + chilis).
My son ate 8 out of 13!!! 🤤😍

Ingredients 
2 cups Sprouted Mixed Beans
3/4 cup Foxtail Millets, soaked for 3-4hrs
2 inch Ginger 
2 Green Chillies 
1 teaspoon Fennel Seeds
1 cup Greens, finely chopped (spinach/fenugreek leaves)
Salt to Taste
Oil to make Crepes 
Method:
- Grind the sprouted mixed beans (I used cow peas, whole moong dal, kala chana, horsegram // you can use any you have in hand), soaked & drained Foxtail millets, ginger, green chillies, fennel seeds to a smooth paste adding little water at a time. Consistency should be thicker than the normal dosa batter.
- Take out in a bowl, season with salt and whisk well. - Add in the chopped greens (spinach/methi), mix well and the batter is not ready to make Crepes.
- To make Crepes - pour a ladle full on a heated skillet, spread it as you make dosas, smear a little oil on the sides and let it cook for a couple of minutes.
- Flip over and cook the other side for another couple of minutes and it’s ready. .

Note: I made this with the Sprouted beans I had readily in hand. In case you don’t have, soak the mixed beans of your choice overnight and proceed to follow the recipe.

Could not wait to try the world famous Chicago deep dish pizza. With so many pizzerias to try, we picked Lou Malnati's as recommended by a friend. 
I ordered the basil tomato and cheese, and there was nothing basic about it. The crust, the cheese pull, the herbs and char.. my mouth waters just typing this! Neil ordered the meat lovers, and together with some salad and buffalo wings, we were set.  It was so heavy and indujlgent @onesixtwoun had more than enough to pack for her trip back to DC. 😂🙈🍕

Finally decided to make Barnyard Millet Bisibelebath and it turned out to be so good... .

I cooked the millet and lentil separately and then mixed it with veggies and spice powder followed by simmering till it is done. I prepared the bisibelebath masala separately, it can be substituted with regular sambar powder too..

Here goes my bisibelebath masala ingredients: 
4 tsp coriander seeds
4 tsp chana dal
2 tsp urad dal
10 red chillies
1 tsp cumin
½ tsp black pepper
2 cardamom
1½ inch cinnamon
3 cloves 
¼ tsp fenugreek
12 curry leaves
3 tsp of coconut 📍Dry roast till fragrant, grind to a fine powder and store it in glass canisters until use..

Indonesian cuisine is known for its vibrant colour and robust flavours. Most of the dishes are simple to prepare with minimal ingredients, but is categorised with its intense flavours. An Indonesian meal comprises of various components, namely the main flavoured steamed ice, accompanied by various kinds of sambal (spice paste), satay or any grilled meat dish, sautéed water spinach or vegetables, fried anchovies or shallots and salad. Sambal is one of the main flavouring relish or a side dish eaten with pretty much every meal, along with the steamed rice. The authentic sambal is prepared using the dried shrimp paste, however in our recipe we have tweaked it to the likings of the Indian vegetarian palate. Telor means eggs in Bahasa, and forms an integral part of the Indonesian cuisine. Sambal Telor is a delicious Egg curry cooked in a spicy Sambal. .

Nasi Uduk is a beautifully flavoured coconut rice. Usually lemongrass, galangal, pandan leaf knots, palm sugar and coriander seeds are used to flavour the Indonesian sticky rice which is cooked in coconut milk. However, here we have flavoured the rice with lemongrass and ginger. The intense flavour of the lemongrass amalgamates pretty well with the subtle coconut milk. .

Dal Bafauri is an easy to make snack from the Bhojpur District of Bihar. It is a healthy snack made using chana dal. The chana dal is soaked for a few hours, ground to a paste and flavoured with garlic, chillies, coriander leaves and then steamed. Since it is not fried, it makes for a wonderful healthy tea time snack. Serve it along with a spicy Coriander Chutney and let the magic weave with each bite. .

Ingredients 
1.5 cups Chana dal, soaked for 3-4 hours
1 Onion	, finely chopped
3 cloves Garlic
2 Green Chillies
1/2 teaspoon Caraway seeds
Coriander leaves, finely chopped
Salt	, to taste 
Method
- Wash soak the Chana dal for 3-4hrs. Drain the soaked chana and grind it to a smooth paste and take it out in a bowl.
- Now, roughly pound the garlic and chilies using a pestle and mortar and add it to the bowl of ground chana dal.
- Add the chopped onions, coriander leaves, caraway seeds, season with salt and mix well.
- Make small round balls of the prepared mixture, place it on the greased steamer plate and steam for 20 minutes or until the balls are well cooked.

Fry them in hot oil. 🔖Serve hot with garlic coriander chutney or tomato ketchup.
