Pancakes have a bad reputation, not because they are bad for you, but it's the toppings that we put on that kills the clean eats vibe . Keep your vibe good for you and try these toppings: - heat 1/2 cup of frozen berries with 1 tsp of your favourite jam and use this as your "syrup" or sauce - and to totally win breakfast, heat 1 tbsp of peanut butter and drizzle it over top, this adds an element of good fat to help keep yo belly full.

Grocery stores are now full of pre-cut veggies. They can make meal prepping a dream (well maybe not a dream but easier 😂). #tgif .
Shredded carrots, cubed butternut squash, chopped broccoli and cauliflower, spiralized zucchini... many options. Now they do come at a premium cost but it may prevent you from getting take out, which would likely cost you more.

I add shredded carrot to salads or stir fry, so that I can bump up the nutrition without all the work 👍

Sure, I could pay $15 or $20 on a fancy organic salad full of pretty colors topped with , but it tastes just as delicious (often better) when I make it myself. Besides, more money to spend on that after-work drink later 😉#priorities 🥃

Monday I will have completed 4 weeks of the elimination phase of the low FODMAP Diet. I had originally planned 3 weeks elimination but after even worse symptoms the first 1.5 weeks I needed longer to basically start over. I am not "cured" and it was not the magical fix I had hoped for but I am starting to feel better overall now. My symptoms are much less overall and my constant distention is gone except some bloating here and there still. My eczema has not improved and I've actually developed a new patch. 
I need help from fellow FODMAPers: should I start reintroduction next week? I am now feeling very comfortable and content with the diet actually and terrified to have symptoms return. There's also still a few things I want to test out such as still different types of milks with my coffee as this is still the worse time of day for me and I actually got pretty severe burning, pain and distention a few times this week. (I'm in denial it could be the acidic coffee! ❤️☕️) I think it could be the lactaid milk although it should be tolerated-I was using soy milk for years and minimal dairy for a while. 
My rational mind knows I can always return to elimination when needed and it is important to start adding more variety back in, plus I want to enjoy eating out in a little over 1 month on vacation and feel more comfortable again. Advice please! 
On another note, besides the coffee dilemma, my other biggest worry was switching up my daily breakfast to low FODMAP. I have found my new regular and now will likely just stick with it- quinoa batch cooked for the week in lactaid (still would like a better alternative) vanilla extract and cinnamon topped with fresh berries and @goodmix_superfoods blend 11 to help feed the good bacteria and #healthegut #healtheguthealthebody #lowfodmap #lowfodmapdiet #lowfodmapfood #lowfodmapfood #ibd #gastrointestinal #guthealth #guthealing #whatadietitianeats

Riso bollito, uova sode e asparagi surgelati preparati ieri mattina mentre facevo colazione per il pranzo di ieri. Chiaramente è un pasto semplice e per molti sarà poco invitante, ma purtroppo prepararsi la schiscetta comporta del tempo e organizzazione e non è sempre facile riuscire a preparare qualcosa di invitante, ma non per questo rinuncio ad un piatto sano, equilibrato e saziante. Voi cosa portate per il pranzo al lavoro?

Week 4 of work survived! Mummy and Ruby breakfast this morning YEY - eggy cinnamon crumpets with 🍌 and yogurt. Ruby is being very clingy at the mo so I had to make this ✋one handed! We have her 10 month review today. I’m slightly worried about what they’ll say about her frequent #breastfeeding and night wake ups. Added jalapeño, diced tomatoes, broth, kale and about 1.5 cups liquid egg whites, 2 whole eggs and a splash lactose free milk. Topped with some heated lactose free cream cheese I had leftover from a dish I made for a gathering this past weekend and fresh green onion and cilantro.

La cena di stasera è una vellutata densa di lenticchie decorticate e carote con quinoa! 😋 Di solito preparo una zuppa con questi ingredienti (trovate la ricetta nel link in bio), ma questa è stata pensata per il corso sullo svezzamento che ho tenuto sabato scorso e infatti questa è quella che è avanzata che avevo congelato per non sprecarla! Io sono per l’autosvezzamento, ma ci tenevo che i genitori conoscessero alimenti diversi come la quinoa che è perfetta anche per i bambini e generalmente gli piace anche molto 😍 Anche chi decide di seguire lo svezzamento tradizionale può preparare pappe che abituino il bambino a un’ampia varietà di alimenti sani e gustosi! ✌🏻

Got inspired recently to make some tabbouleh, after I had a random craving for it. Then got super frustrated when I couldn’t find bulgur at my local grocery store... so decided to switch things up and make it with some leftover quinoa! So delicious, and quinoa is popular, so likely in most store (plus it’s gluten free, if that’s important to you). It’s such a fresh tasting salad 🥗

Got inspired recently to make some tabbouleh, after I had a random craving for it. Then got super frustrated when I couldn’t find bulgur at my local grocery store... so decided to switch things up and make it with some leftover quinoa! Coconut lime gluten free breaded sea bass- I whisked 1 egg with some turmeric and ginger, dipped the fish, then coated in gluten free breadcrumbs and desiccated coconut, doused some lime juice and baked in a coconut oil lined pan. Celebrating all week long! One of the things I always tell myself year after year during Lunar New Year is to cook more, especially Vietnamese food. There’s something quite comforting to me being able to recreate fond delicious memories from my childhood.

One of my favorites includes this sticky rice dessert with black-eyed beans and coconut milk or “che dau trang” (don’t even ask me where the accent marks go), which roughly translates to white bean dessert. You might think beans as sweets is weird, but knock it until you try it. You’d be surprised. A bonus is that it’s #dairyfree and #plantbased, if you’re lactose-intolerant (like me!).

It’s super simple to make, but the small details make all the difference. I cooked my sticky rice and coconut milk with pandan leaf (aka screwpine aka AZN VANILLA) which provides a fragrant aroma similar to vanilla. Where can you find pandan leaves? Asian market has all the goodies, some you can find fresh, frozen is ok. I’d stay clear of the pandan extract bottles because those are artificial tasting AF (not to mention super unnaturally green). You can use high quality vanilla extract if you’re in a pinch. I add a bit of salt to the coconut milk for a sweet savory punch.

This past weekend I also learned how fast you can cook beans from start to finish in an InstantPot. 20 minutes with NO OVERNIGHT SOAKING. Times may vary depending on the bean. Fresh cooked beans taste way better compared to their canned counterparts. You do run the risk of non-aesthetically looking beans as they may burst during high pressure cooking. But if that’s not a huge concern, then pressure on! It worked perfectly for this recipe.

I’m pretty surprised how easy this was to make, and kicking myself why I didn’t learn sooner. I may or may not have made this twice in one weekend. But that’s what holidays weekends are for. ✌🏼

Ormai padroneggio la farina di lenticchie! Questi sono pancake di farina di lenticchie (farina di lenticchie,  acqua,  sale,  olio,  paprika), che possono essere usati come accompagnamento di zuppe,  insalate e verdure, volendo si possono utilizzare anche a colazione (magari sostituendo la paprika con cannella,  zenzero o vaniglia). Per pranzo preparo molto spesso un piatto unico con pasta o cereali, legumi e verdura proposta che mi piace molto e mi permette di fare un pasto equilibrato e saziante sia a casa che fuori casa portandomi la schiscetta! Qual’è il vostro pranzo preferito?

I made this bright and sunny dish and enjoyed my mama's company last evening. Lemon butter caper chicken thighs with fresh chives, rosemary and parsley baked with green beans, cherry tomatoes and served over quinoa.

Negli ultimi minuti di cottura del l’orzo ho aggiunto gli spinaci cotti in precedenza e un cucchiaino di curcuma. Ho messo poi tutto in contenitori ermetici e messo in frigorifero. Ricetta molto semplice e veloce che prevede la cottura in forno di questi gamberoni a 180 gradi per circa 20 minuti solo pepati e salati. Appena fuori dal forno, un tocco da gran gourmet: versare qualche goccia di rum e flambare! 
Deliziosi e scenici anche per una cena con amici.
Accompagnati dal solito pane (carboidrato) e da una porzione di cicoria cimata (o verdura a scelta) per un pasto completo.

Voi li aggiungete? Io non sempre lo faccio, spesso no per questioni di tempo, ma quando posso eccome se me li godo insieme! 😋 Non trovando mai le trofie integrali però, le sostituisco sempre con le caserecce di @pastagarofaloit .. in assoluto la mia pasta integrale preferita! ✌🏻
⁉️ Pasta e patate insieme non sono un’accoppiata da fare spesso poiché entrambe sono ricche in carboidrati e amidi, ma se dovesse capitare, per non eccedere, vi basterà ridurre la porzione di pasta e non esagerare con quella di patate. Qualche cubetto è sufficiente per rendere il piatto sfizioso!
Insieme alla fibra della pasta integrale e a quella dei fagiolini l’indice glicemico non subirà sbalzi esagerati (le patate da sole infatti favoriscono un innalzamento veloce della glicemia) e, soprattutto, se come me aggiungete anche finocchio crudo da sgranocchiare e vi godete una bella arancia, la modulazione della glicemia e la sazietà sono assicurate! ✌🏻

My favourite dishes of Cambodia 🍽🤤🇰🇭 Khmer food was delicious and although less chilli, they’re full of herbs and spices!! It shares many dishes with its neighbours and I found noodle soup similar to Vietnamese phở. Thailand's refreshing salads and sour soups. Indian-inspired curries, and noodles and stir fries handed down from years of Chinese migration. 📌Top: Lok Lak - stir fry Khmer beef steak with soy sauce Kampot pepper served with fried onions, lettuce and tomatoes 📌Left: Green Mango salad. Similar to Thailand’s Tom Sum (Green Papaya Salad). South East Asia is a tropical climate all year round, therefore many dishes that are supposed to be made with veggies are made with unripened (green) fruit and once ripe are used as desserts. I’ve not seen this in any other cuisines and I think it’s brilliant!! 📌Right: Fish Amok- steamed cuttlefish or river fish in banana leaves made with a Khmer curry paste (similar to Thailand’s flavours) and added coconut milk. •

Still dreaming 💤 of this delicious dinner from date night this weekend: tacos 🌮 & margaritas 🍹 from #imperialferndale. We split a salsa flight (always) & I had a chicken lime taco, loaded vegetarian 🌭, Mexican corn 🌽, a house margarita & a spicy margarita 🌶. I was in a full food coma after this dinner & promptly passed out by 10 pm when we got home. 😂 I highly suggest trying this place if you’re in the Detroit area - seriously something for everyone & I’ve never had a bad meal here! .

Adaptability. I've been schooled in this lesson time and time again since last April when I got pregnant and my world began to change forever. As a person who thrives on routine, productiveness and predictability, it's not always easy to embrace change. Throughout my pregnancy, I had many new habits to adapt to. Fast forward to January and life changed more than I could have ever imagined. While I made it a goal to keep up a healthy eating routine that included cooking at home, my dietary restrictions made that tough. As a pescatarian, it was difficult to find fish/veggie high protein recipes I could make in bulk and reuse during the week - and without that added convenience, cooking was no longer feasible for me on a daily basis. I knew something had to change and felt adding chicken into the mix would change the game for me, but it was a tough decision because being a pescatarian felt like a big part of my identity and by changing that I was losing a part of myself. In hindsight I know this was a ridiculous concern, because so many other things define me. My ultimate goal was nourishing myself and Olivia, but in the moment I was afraid of what the change would mean for me emotionally and I was scared to share it publicly. You're probably sitting there now thinking SERIOUSLY, AMANDA? IT'S NO BIG DEAL. CHILL THE EFF OUT. And you're totally right. It's no big deal. So here it is - my first post with {gasp} chicken!! Loaded sweet potato tacos, topped with beans, shredded chicken, salsa, cheese and Greek yogurt 🎉 This entire meal was made in the microwave (I cheated with pulled rotisserie chicken from the @wholefoods salad bar) and was on the table in ten minutes, which left me and the hubs more time to catch each other up on our days before bath time 👍🏻maybe one day I'll go back to being a pescatarian, but for now this is what works for me and my family. What you’re looking at is equal parts survival strategy and a clever way to get kids to eat their veg.

My kids seem to want nonstop food from 3 until dinner. I’ve found that putting out a tray of ‘kid friendly’ veg at about 4PM works insanely well, so I can actually get dinner on the table.

I’m not much for hiding veggies. I think we need to teach our kids from day one that veggies are important foods and help them discover a taste for them. Don’t be  afraid of sauces with a bit of salt or sugar to ease them in.

I do, however, play with texture a lot. My son wouldn’t eat leaves for five years...but would eat greens if they were cooked. Roasting broccoli with plenty of olive oil turned my kids into fans. They won’t eat it raw.

Spiralized veggies are insanely fun...and might inspire more munching. And of course, I love purées. A bit of extra canned pumpkin in a marinara, or beet purée in hummus for my Trolls obsessed toddler. 
Get older kids involved in shopping. Encourage them to choose 1 new-to-them veggie a week and search together to learn more about it.

1 bag chopped salad or coleslaw mix or finely chopped red cabbage
1 bunch green onions, chopped
1 bunch cilantro, rough chop of the leaves

Dressing:
2/3 C mayo (@primalkitchenfoods avocado oil mayo is our fav)
1/4 C olive oil 
2 limes, juiced
2 T honey
.
Whisk dressing together and pour over veggies. 👊🏼

Easy and I think it tastes even better on day 2! 😉

This might be the prettiest meal I've made since Olivia arrived! 😍 While I still very much prioritize healthy eating and make a point to not order in for every meal, I definitely haven't been focusing on making fancy dishes or trying new recipes. This meal came together thanks to weekly grocery sales and stuff I already had at home. Found the salmon on sale at @fairwaymarket and was inspired by some @sabra tzatziki in the fridge to make it Mediterranean. Made a box of @neareastrice red pepper quinoa and plopped on some pre-cooked @traderjoes lentils to round it all out (plus that tzatziki on top!) 👌🏻Plus since I pre-prepped most of it yesterday, it took no time to throw together tonight!!

Tonight’s meatless Monday: Roasted chickpeas,kidney beans, mushrooms, green peppers and red onions lightly fried and served in a wrap with a basil yoghurt dressing and topped with avocado, feta and olives. I rolled emsies into little wheels and cut them in half which you don’t see here and she loved her supper. I served some of the chickpea, feta and avocado on the sides for her as she knows and loves those foods so she wasn’t overwhelmed by something she hadn’t tried before. She did really well and tried absolutely everything and actually ate quite a lot. This eating supper together is really helping her variety. This was a really easy supper to make for the family. Deze maandag willen wij het met jullie hebben over lichamelijke beweging en sport. De goede voornemens, of ze 1 januari of op een andere dag starten, houden voor de meeste mensen vaak in meer te gaan sporten en/of op de voeding te gaan letten. Maar welk doel heb je nu eigenlijk voor jezelf gesteld? Afhankelijk van het doel wat je wil behalen is zowel de voeding als de lichaamsbeweging in de vorm van sporten belangrijk. Wil je bijvoorbeeld kilo's kwijt dan zal je toch echt je voedingspatroon moeten veranderen. Kilo's raak je kwijt door een negatief energiebalans (voedingsinname minder ten opzichte van de behoefte). Door je voeding aan te passen kan je ervoor zorgen dat je minder calorieën binnen krijgt per dag, waardoor er een negatief verschil ontstaat. Sport kan je energiebehoefte vergroten, maar zonder het veranderen van je voedingspatroon zal je minder bereiken. Wanneer je bijvoorbeeld nu meerdere keren per week gaat sporten, maar nog wel ongezond eet zal er weinig gebeuren in je lichaamsgewicht. Wil je niet perse kilo's kwijt maar wil je spiermassa of conditie opbouwen wordt sport een belangrijkere factor, maar is de voeding belangrijk voor het spierherstel en je uithoudingsvermogen. Zorg dus dat je beide factoren gebruikt, maar in de goede verhoudingen. De diëtist kan je hierbij helpen.
