Daikon Carrot Salad 🌱👏🏽✨!
My 5 year old just pronounced it her favorite (hope she'll remember that next time, ha ha 😂)! Shredded daikon & carrot, sliced green onion, @kevala_organics sesame seeds - season according to your tastes (lime juice or aminos gives great flavor)!
These have been a staple for me during the last four weeks that I have been Shredding, and I'm feeling amazing 🙌💪 A day doesn't go by that I don't make some kind of vegan superfood smoothie using these as a base (mango, berry, spirulina, salted caramel, vanilla tahini....you get the idea!) They are super clean, 100% plant based, vegan, gluten free and loaded with superfoods, not loaded with synthetic artficial ingredients like some 'premium' shakes on the market today. ignoring the fact that it’s February and I live in Scotland and getting back on the smoothie bowl grind; starting off with a tropical blueberry muffin one 😛 to make this bowl I blended the new blueberry muffin @nakdwholefoods bar with frozen banana, blueberries and raspberries and topped with more bluebs, mango and chia. soooo good and so filling with the addition of the nakd bar, defo a great thing to put in if you find smoothies never make you feel full!! #muffinbutthebest 🍇🍌
It my not look like much but there are a lot of great pieces to this picture. First, be sure to not overlook your local farmers market. The portobello mushroom here, along with the pepper, were unbelievably tasty and super cheap! Second is that variation of colors across the veggies. Different colors mean different nutrients and minerals; getting the different varieties is important to overall health! And finally number three - the importance of taking the time to enjoy the process of creating a meal for yourself. There is something zen-like about knowing everything that is in your meal and creating something delicious and nutritious for yourself! What did you find at your local farmers market this week?
Chia pudding looks a little alien 👽but tastes sooooo good. Plus, chia seeds are loaded with omega-3 fatty acids, fiber, and protein, so it keeps us full all morning. 👌🏼 This bowl is a blend of tropical fruits and coconut milk, mixed with chia seeds and refrigerated overnight. Super easy to make and even easier to top with pretty blueberries, almond slivers, and banana slices. 🍍🍌☺️
this vanilla chia seed pudding with date caramel layered through might be the best thing I’ve made in a little while!
VANILLA CHIA PUDDING:
2 tbsp chia seeds
2/3 cup homemade coconut milk
2 tsp vanilla extract
1 tbsp coconut sugar
blend until smooth and then let it chill in the refrigerator while you prepare your date caramel
SMALL BATCH DATE CARAMEL:
1/3 cup deglet noor dates (soaked in warm water for 10 mins if they’re dry — you could also use medjool dates)
2 tsp peanut butter
2 tsp almond butter
a splash of water + a pinch of pink Himalayan salt
blend until smooth (I left it a little lumpy because it’s tough blending small batches of date caramel). I then transferred the caramel into a small metal bowl and popped it in the freezer so it could firm up. I recommend doing this!
Once everything has thickened up after cooling, layer the pudding and the caramel throughout a jar and enjoy!

If you follow me, you probably know I've been struggling with some really bad shoulder pain for the last 8 months and as a result, I've been very frustrated and quite sad about how little I'm able to accomplish these days. But today, I woke up and decided to do something nice for myself. I wanted to challenge myself make something a little special and fancier than I normally eat for lunch. This dish is considerably more refined and elaborate than most things I make for myself on a daily basis. I've had this can of hearts of palm taunting and staring back at me in the pantry for months and today was the day I was going to tackle it! It may have taken me the entire length of Dirty Dancing and Little Shop of Horrors to make this; I may have had to take a lot of breaks to rest my arm and shoulder along the way; It may have been really difficult to lift my heavy camera to take a few pictures of it to share with you, but I did it! My shoulder is really sore now, but I feel a little more capable than I did yesterday. Self-care can take many forms, and today it was about challenging myself and doing something special for myself because I'm worth it, even when I'm feeling pitiful and useless with my shoulder the way it is. Judging by this pretty (and delicious!) dish, guess I'm not so useless after all!
Let’s talk fake meats! 🧐🗣 ___________________________ I have heard people ask this question many times before ‘Why do vegans eat meat substitutes?‘ - Personally, I believe eating has a lot to do with habits. When transitioning from an omnivore or vegetarian diet to a vegan one, people have to change eating habits that have been with them since their childhood. While some find it easy to replace the portion meat or dairy were taking up on their plate with legumes, vegetables, or other plant based, high portion foods, such as tempeh or tofu, others may struggle at first. And this is where fake meats come in. 👇
They provide a similar taste and visual experience without the cholesterol, inflammatory animal protein and antibiotics, which are found in most conventionally farmed animals.
Oh, and don’t forget the people who are vegan for the animals and environment, and not because they dislike the taste of meat! 🐮🐷🐥🦑🦐🦀🐠
The less processed a fake meat product is, the better in my opinion. I see processed fake meats with long ingredients lists as a treat. -

The picture on the left was taken last summer. It included youth group kids who had spent their Saturday helping a stranger move out of her apartment. I’m the one who posts to our youth group social media accounts, so when I saw this picture, after gasping, I cropped it to cut most of my body out before posting it. Cropping it left some kids with only their heads barely in the photo, but I wasn’t about to post the full body picture. I was embarrassed by how big I looked in the photo. .
The girl in the picture had just experienced 3 moves in about a 9 month span. I was exhausted emotionally, physically, and spiritually after church hurt, marriage struggles, and just life in general. .
Fast forward to today when I found this picture. My heart has been healed tremendously by Jesus. My marriage is stronger than probably ever. Our church is supportive and loving and encouraging. I have healthy friendships and I’ve made time to focus on me. I’m happy. So...I decided to find the same outfit and put it back on to see if I could notice a physical difference. And, can we say holy wow. I started this journey just under two months ago and I’m so encouraged by the subtle differences I can see here. I can’t wait to see what the next few months brings.

Look him up and listen to him speak, there are a whole heap of videos of "Cowboy Don" on YouTube, he speaks the truth about health, well being and our incredibly corrupt pharmaceutical industry.

This beautiful veggie bowl is a nice break to my usual salad (I’m also out of greens 😭)
The amazing, creamy tahini dip is inspired by @fullyrawkristina 🙏🏼💗
Here’s how I do it:
1 heaping spoonful of tahini
Juice from half a lemon 🍋
Pinch of salt
Splash of water
Wisk until well combined into a dip consistency. You may need a little more water but add a tiny splash at a time because it can go from perfect to watery quickly. These measurements are great for a single serving like what you see. This is also a great salad dressing! Enjoy 🤗

Caloric restriction vs a WFPBD
According to studies, people eating a meat-free diet consume an average of 364 calories less on a daily basis.* At the same time they're being bombarded with micronutrients, phytonutrients and those lovely life-enhancing antioxidants. In my opinion that sounds like a near perfect long-term plan for weight-loss wouldn't you say?
Another study showed that people on a plant based diet may have an 11% higher resting metabolic rate. How?
It could be because vegans (and vegetarians) have a higher amount of a fat-burning enzyme called "carnitine palmitoyltransferase", which basically shovels your fat into the mitochondrial furnace inside your cell.
Conclusion; calories for meat-eaters and calories for plant-eaters are not always the same!
I like to finish my posts with a personal reflection and this time I have to say that my training, recovery process and results are off the charts.. I am gaining muscle, recovering faster, burning fat and eating like it was my last day on earth and I feel amazing!

Say good bye to restrictive eating if you want to lose weight 👋🏻 Just focus on whole plants (right pic) and eat more processed foods (left picture) in moderation.
The donut 🍩 is 450 calories and 100 gram. The whole food plant based meal on the right is 350 calories and 450 gram of food🌿 .

Ohhhh juice please cure me 🥕🍏🍊I've been fighting I don't even know what since late Sunday afternoon on my drive home. I haven't been sick in a long time and I've lost 5lbs since Sunday from lack of appetite/nervousness of an upset stomach, but I am doing all the good things. Fluids, rest and natural vitamins from all the fruits n veggies! 🌱 Hopefully this ginger beet juice will kick my unhappy immune system into gear.
Excited to dive into this bowl! Cauliflower rice, left over acorn squash (this is a new vege for me, yummy!) and pinto beans with a little Sriracha and cilantro.
I never really loved my cauliflower rice before, but I think I found the trick!! Puree or “rice” it and then freeze in serving size baggies-it is worth it to do big batches to save time and prep. Thaw when needed and the excess liquid can be easily squeezed out by holding the bag upside down and pressing hard. My rice came out firm and delicious...no mush anymore!
