The portobello mushroom here, along with the pepper, were unbelievably tasty and super cheap! Second is that variation of colors across the veggies. Different colors mean different nutrients and minerals; getting the different varieties is important to overall health! And finally number three - the importance of taking the time to enjoy the process of creating a meal for yourself. VANILLA CHIA PUDDING:
2 tbsp chia seeds
2/3 cup homemade coconut milk
2 tsp vanilla extract
1 tbsp coconut sugar
blend until smooth and then let it chill in the refrigerator while you prepare your date caramel
SMALL BATCH DATE CARAMEL:
1/3 cup deglet noor dates (soaked in warm water for 10 mins if theyโ€™re dry โ€” you could also use medjool dates)
2 tsp peanut butter
2 tsp almond butter
a splash of water + a pinch of pink Himalayan salt
blend until smooth (I left it a little lumpy because itโ€™s tough blending small batches of date caramel). I then transferred the caramel into a small metal bowl and popped it in the freezer so it could firm up. I recommend doing this!
Once everything has thickened up after cooling, layer the pudding and the caramel throughout a jar and enjoy!

If you follow me, you probably know I've been struggling with some really bad shoulder pain for the last 8 months and as a result, I've been very frustrated and quite sad about how little I'm able to accomplish these days. But today, I woke up and decided to do something nice for myself. I wanted to challenge myself make something a little special and fancier than I normally eat for lunch. This dish is considerably more refined and elaborate than most things I make for myself on a daily basis. I've had this can of hearts of palm taunting and staring back at me in the pantry for months and today was the day I was going to tackle it! It may have taken me the entire length of Dirty Dancing and Little Shop of Horrors to make this; I may have had to take a lot of breaks to rest my arm and shoulder along the way; It may have been really difficult to lift my heavy camera to take a few pictures of it to share with you, but I did it! My shoulder is really sore now, but I feel a little more capable than I did yesterday. Self-care can take many forms, and today it was about challenging myself and doing something special for myself because I'm worth it, even when I'm feeling pitiful and useless with my shoulder the way it is. When transitioning from an omnivore or vegetarian diet to a vegan one, people have to change eating habits that have been with them since their childhood. While some find it easy to replace the portion meat or dairy were taking up on their plate with legumes, vegetables, or other plant based, high portion foods, such as tempeh or tofu, others may struggle at first. And this is where fake meats come in. ๐Ÿ‘‡

When you are all vacationed out, and even the act of grocery shopping seems too much ๐Ÿ˜‚ I literally threw together this scramble, and itโ€™s super tasty!  Broccoli, peppers and polenta.  Thatโ€™s pretty much it, folks.  A little salt and pepper, parsley and oregano for flavor... and its not bad!  I opted to cook it with a bit of vegetable broth instead of oil. The picture on the left was taken last summer.  It included youth group kids who had spent their Saturday helping a stranger move out of her apartment.  Iโ€™m the one who posts to our youth group social media accounts, so when I saw this picture, after gasping, I cropped it to cut most of my body out before posting it.  Cropping it left some kids with only their heads barely in the photo, but I wasnโ€™t about to post the full body picture.  I was embarrassed by how big I looked in the photo. .

The girl in the picture had just experienced 3 moves in about a 9 month span.  I was exhausted emotionally, physically, and spiritually after church hurt, marriage struggles, and just life in general. .

Fast forward to today when I found this picture.  My heart has been healed tremendously by Jesus.  My marriage is stronger than probably ever.  Our church is supportive and loving and encouraging.  I have healthy friendships and Iโ€™ve made time to focus on me.  Iโ€™m happy.  So...I decided to find the same outfit and put it back on to see if I could notice a physical difference.  And, can we say holy wow. I started this journey just under two months ago and Iโ€™m so encouraged by the subtle differences I can see here.  I canโ€™t wait to see what the next few months brings.

1 can of chopped tomatoes 
1 can of green lentils
2 cloves garlic 
2 tbsp tomato purรฉe 
1 tsp onion powder 
Fresh basil leaves 
Salt & pepper, to taste .

1 heaping spoonful of tahini
Juice from half a lemon ๐Ÿ‹ 
Pinch of salt
Splash of water

Wisk until well combined into a dip consistency. You may need a little more water but add a tiny splash at a time because it can go from perfect to watery quickly. These measurements are great for a single serving like what you see. This is also a great salad dressing! Enjoy ๐Ÿค—

Caloric restriction vs a WFPBD

According to studies, people eating a meat-free diet consume an average of 364 calories less on a daily basis.* At the same time they're being bombarded with micronutrients, phytonutrients and those lovely life-enhancing antioxidants. In my opinion that sounds like a near perfect long-term plan for weight-loss wouldn't you say?

Another study showed that people on a plant based diet may have an 11% higher resting metabolic rate. How?

It could be because vegans (and vegetarians) have a higher amount of a fat-burning enzyme called "carnitine palmitoyltransferase", which basically shovels your fat into the mitochondrial furnace inside your cell.

Conclusion; calories for meat-eaters and calories for plant-eaters are not always the same!

I like to finish my posts with a personal reflection and this time I have to say that my training, recovery process and results are off the charts.. I am gaining muscle, recovering faster, burning fat and eating like it was my last day on earth and I feel amazing!

Ohhhh juice please cure me ๐Ÿฅ•๐Ÿ๐ŸŠI've been fighting I don't even know what since late Sunday afternoon on my drive home. I haven't been sick in a long time and I've lost 5lbs since Sunday from lack of appetite/nervousness of an upset stomach, but I am doing all the good things. Fluids, rest and natural vitamins from all the fruits n veggies! ๐ŸŒฑ Hopefully this ginger beet juice will kick my unhappy immune system into gear.

And thanks to @coconutbowls, I made my ice cream into a breakfast smoothie bowl that tastes absolutely divine! Yummy!

Excited to dive into this bowl!  Cauliflower rice, left over acorn squash (this is a new vege for me, yummy!) and pinto beans with a little Sriracha and cilantro. 
I never really loved my cauliflower rice before, but I think I found the trick!! Puree or โ€œriceโ€ it and then freeze in serving size baggies-it is worth it to do big batches to save time and prep.  Thaw when needed and the excess liquid can be easily squeezed out by holding the bag upside down and pressing hard.  My rice came out firm and delicious...no mush anymore!
