Meal Prep Sunday kicked my ass today. 😆
So much food! Breakfast, lunch, dinner, and snacks all ready for grab-n-go this week! It’s going to be a busy, busy week so I like having these meals ready in case I can’t (or don’t want to) cook. .
-PB cup overnight oats
-carrot, raisin, oat muffins
-Ginger chicken stir fry with quinoa
-Mediterranean chicken salad
-Banana coconut granola
-Salmon, millet, veggies
-Vegan corn chowder
-Baby carrots, hummus, celery, almonds, dark chocolate, pre-portioned chicken (to add to chowder if desired)
If anyone needs me I will be enjoying a glass of wine with my feet up! I’m exhausted!! 💆🏻♀️
It might not look like it.. but this soup was delicious! I made @nomnompaleo pork and Napa cabbage soup for dinner last night, and the #umami did not disappoint 😉 It was a quick, one-pot, healthy meal. Perfect for winter weeknights, and plenty of leftovers!

Easy peasy dinner tonight its too bloody hot for anything else. Curry puffs made by my husby 🙌🙌
Frozen peas 1-2 cups
4 small potatoes diced
1 cup of stock
1 tablespoon curry powder
1 teaspoon sugar
4 sheets of pastry thawed
Milk or egg for pastry
Greek or natural yogurt for serving.
Boil potatoes till soft. While they are cooking. Brown off garlic onion and add mince till brown. Add curry powder, stock Worcestershire sauce, & sugar. Let it cook down for a bit. Throw in the peas. Drain potatoes and mash into thr mixture. I like them really mashed in but u could leave them chunky of you prefer.
Cut the pastry into squares or triangles however u prefer. Fill with 2 tablespoons of mixture, seal and put onto a lined baking pan. Brush with milk or egg wash bake until golden brown and crispy...probs about 15mins in our oven as its hot and cooks well! Serve with ur fav greek or natrual yogurt! This made enough to put some mixture in the freezer aswel. If u had a bigger fam to feed u may need more pastry and use all the mixture.
This took less than 15 minutes to make, including boiling the water. Mix into whole grain pasta your favorite TJs pesto (brag post about the kind I used coming next), spinach, and parmesan cheese. Sauté shrimp with olive oil, pepper, and salt. You’re done! #pesto#weekdaymeals#quickmeals#pasta#shrimp

Homecooking doesn’t have to be elaborate. I have a lot of work to do so fast pasta is a go to in my family. Top it with turkey bacon (I prefer to bake mine at 375F for 10 minutes) , spinach, throw in mushrooms, sauce and we are good. The kids eat it, Mom and Dad eat it and once again no need to make separate meals. I just want to share this pic of tonight's dinner with you. 💕 In my culture, when we cook something and a person / people we know turn up unannounced, it is always customary to invite them (generally, to not take 'no' for an answer, should I say!😉) to stay for the meal that is being prepared - be it breakfast, lunch or dinner. It is deemed a blessing to have guests (be they family or friends, neighbours, or indeed relative strangers) enter ones home and so, they are treated as an extension of ones own family. I love this tradition and of course it is more so the philosophy behind it that fills me with a deep sense of gratitude to have been brought up to welcome a guest into my home, seen not as a burden, but as a blessing. 🙌🏼💕Tonight we had a couple folks turn up. I had already started making the minced lamb for just my family tonight, and so quickly put on the daal and turmeric potatoes too (last video uploaded of popping seeds was in prep for this!). The macerated red onion, and cucumber & tomato salad took no time, and taking some tandoori naan out of the freezer (bought freshly made from the afghan baker not so far from my parents home, cut into quarters and frozen that very same day), defrosted in the oven for a few minutes and served lovely and warm were the final addition to a simple weekday dinner, instantly becoming an unassuming 'everyday feast'. 🙌🏼🍴 The blessings of abundance soon became apparent when everyone had eaten to their heart's content, and I still had enough leftovers to pack for the two who wanted to be here but couldn't. They also got some cake I baked today! ☺️🍰 We call this 'kismet' (destiny) - that only God knows who's name is 'written' on the food you have cooked, making them destined to eat it wherever they are, and wherever they have travelled from! 🙏🏼 💖👼🏼
homemade vegan pizza 🍕
top a store-bought pizza base (check the ingredients thoroughly as some have milk solids in them) with tomato paste, a sprinkle of chilli flakes, a handful of chopped parsley, sliced mushrooms, capsicum, cherry tomatoes (my sister grew these ones 💓), olives, and a few dollops of vegan halloumi (i made mine with the @madmilliekits vegan cheese making kit - well worth the investment, I got mine @chefsales_au). bake at 180°C for 20 minutes.

Half a day more until the weekend ends. Mentally preparing myself to get through the work week.
For this recipe, heat water with a pinch of turmeric and once the water starts to boil add whole chicken breast. Cook until done. Shred the chicken, add pepper, salt and keep aside. In a wok heat vegetable oil, add sliced cabbage, ginger, chopped carrot, French beans, onions, scallions and stir fry in high heat. Add oyster sauce, pepper and salt and continue to stir fry. Then add the chicken and cooked rice. Finally garnish with the greens of scallions.
Everything is better when it's wrapped in bacon, but this pork tenderloin was made all the better with a feta, spinach and tomato stuffing! It's surprisingly easy to butterfly tenderloin and the stuffing keeps it from drying out! #dinnertime#weekdaymeals#forkyeah
