I have had the privilege of staying at or visiting a lot of amazing properties around the world. My anticipation and expectations leading into my time @ballyfindemesne where exceedingly high. I had heard about this estate for a few years and it has been winning all sorts of accolades since it opened as a luxury property in 2011. The GM is someone I have gotten to know as a friend and would speak of the property with incredible pride.
Ballyfin blew me away. The property is gorgeous. Getting to know the history and the pain staking details the owners have gone too is nothing short of exceptional. All the art, artifacts, history pieces - none where in the property when they purchased it. They all were sourced as needing to come "home" to the estate in which they where from. The service is outstanding. The bathtub was the largest I think I have ever enjoyed a soak. I was in heaven in my short stay. My only complaint is two nights were far too short. I have found my new all time favorite.

🇮🇪 If you're ever in #Dublin , I would recommend to venture a bit out of the city center and make a reservation @forestandmarcy, the sister restaurant of Forest Avenue, for a modern twist on traditional #Irish food. I personally think the best seats in the house are at the long counter where you are can watch the food being prepared in front of you. On Sundays, they only serve a "Farm to Forest" set menu (35€ pp) inspired by a 20 year old, organic, north county Irish farm. Every course was delicious and I would highly recommend it.
I started off with an amuse bouche of homemade caramelized onion sourdough focaccia with kale pesto and home made goats curd. The dip was extremely tasty with an incredible tangy yet creamy flavour that just opened up my appetite.
The second amuse-bouche comprised of raw radishes which had a hint of a spicy kick paired with sweet pickled turnips with an amazing smoked brill roe emulsion topped with a few drops of herb oil and finished with some smoked egg yolk shaved over everything. A delightful mix of flavors.
The third amuse bouche was so good I didn't even remember to take a picture! The top layer was a warm creamy and rich parsnip purée which lay on top of some crunchy tart pickled pearl onions and seaweed and finally a bottom layer of smooth fresh melt in your mouth smoked haddock. Topped with a crispy fried parsnip, I was amazed that this was just the amuse-bouche and that the main meal was still yet to come.
While in Ireland there was great local food experiences, outstanding Irish design elements and a few drinks. There was no yellow buses full of people wearing green or wearing green Mardi Gras beads
Yes, yes we're stuck on Midleton's but it's just too good 🍀 Midleton Barry Crockett Legacy. Irish Whiskey salutes a star. Not many men in the industry are true whisky legends. After a mere 47 years following his father at the helm of Midleton, Red Breast and Jameson, Barry has a whisky of his own, of his own creation. Being blended, single pot, NAS whisky with the oldest whisky being a 25 yo number , Barry had the choice of any barrels creating what he thought was his ‘Legacy’. Interestingly he chose a mix of ex-bourbon and new oak barrels creating a very complex, tasty treat from start to finish. A citrusy peppered honey nose with a delicate vanilla, cinnamon, caramelized apple sweetness under a sun shower of golden charred oak. Smooth, sweet and sensational. #irishlegend
