2 cups oat flower
2tbsp apple cider vinegar
2tbsp maple syrup
Pinch of salt
1.5tsp baking powder
1 cup plant milk
Half to full scoop plant protein powder
When you are vegan and you are visiting your family for a birthday celebration lunch. That means for me an evening before spent in the kitchen preparing my own food. I don't complain, I'm cooking for myself ever since,coz of my healthy lifestyle.
But last weekend was more special even for me, it was my very first VEGAN home visit since I upgraded my healthy lifestyle from vegetarianism (10+yrs) to veganism. I do not see the big difference in my eating, just switched couple of ingredients. I was even happier when my family (all meat eaters ) tried my healthier food probably need to get used to different pure veggie tastes.
But that is also success, spread the good healthy food, spread some vegan vibes and words 💓🙃☺️
I made very classy potato salad with chickpeas 'mayonnaise' , baked tofu with shredded cellery and carrot, veggie soup (made by my grandma), muffins made of buckwheat flour, oat milk for desserts.
We decided to take a little detour into Savannah for breakfast. @foxandfigcafe has some of the tastiest vegan food we’ve had on this trip!! And Savannah is such a cute little area! Their menu is amazing but we ended up trying the eggless quiche, french toast, and breakfast hash with hollandaise 😋 hope everyone’s day is off to a good start ❤️

I’m a huge fan of Italian food. Unfortunately, Italian food is typically full of dairy...but anything can be veganized! The fun is in experimenting and finally figuring out the best way to recreate your favorite recipes. So today I’ll share with you my tofu ricotta cheese recipe! I use it in lasagna, on crostini, or just for dipping crackers 😋
Tofu Basil Ricotta
-1 package extra firm tofu
-1/2 cup fresh basil leaves
-1 tbsp lemon juice
-2 tbsp olive oil
-2 tsp sea salt
-1 tsp black pepper
-1 tsp garlic powder
-1 tsp onion powder
-you may need 2-4 tbsp water, depending on how much you squeeze out of tofu!
Press tofu in a dish towel or paper towels to remove excess water. No need to preserve shape since it will go in the food processor anyway!
Add all ingredients to the food processor and pulse until crumbly like ricotta cheese.
If necessary, add a couple tablespoons of water to get it going. I didn’t need any!

Luna rocking her vegan vibes 💚 This girl 😂 When I workout around the kids (which is most days #momlife ) I make sure they have activities and a filling snack - otherwise 5 minutes in they are needing my attention 🙈 Luna’s smoothie :: celery juice, spinach, banana and hemp seeds 💜💜 These cups are seriously the best - stainless steel with silicon straws and mostly spill proof 👍👍 what do you do to keep your kids occupied while you get in a sweat session??
