We finally tried the @tescofood @wickedhealthy sandwich range! We had the hoisin mushroom wrap, spicy frijoles wrap and fiery tofu and slaw sandwich. All so good 🙌🏻🌱 We took them along with us on our visit to Urquhart Castle today - such a stunning place 🏰🏔📸

This easy to make Mexican rice is quick and budget friendly. Here’s the recipe....more like here’s how to throw everything into a pot!
Add 2 cups rice, one can black beans, one can diced tomatoes with green chilies onion, garlic, bell pepper, chili powder, salt, pepper, 4 cups water to a pot. Bring to a boil, simmer until rice is cooked.

Love the buffalo bites at the moment although they do not fill me up. Been quite hungry this week so maybe it’s my metabolism ramping up. Had very off plan pancakes but I can’t make the on plan ones!
Inspired by @onestepatatime61 I had a go at making nut milk. This one is cashew but I also bought some peanuts to see how that works (mostly because they were much cheaper). I think I was supposed to add a date but forgot at the blending stage despite having some waiting for a good use. Maybe next time 😊. So I added a squirt of this fruit syrup I was lured into buying because of the yellow sticker. Had a little taste and it's yummy ( I would never drink dairy milk straight ). I think this is destined for overnight oats for tomorrow's breakfast.
Updated to add : tried it in tea - this is definitely the closest taste to milk of any alternatives tried so far. Quite creamy in fact. Now to find a ready source of sustainable, local, unpackaged and affordable cashews 😢

Breakfast - 300 calories
🍓5 frozen strawberries
🍓1/2 cup frozen blueberries
🍓2 tbs plain bio live yoghurt
🍓150ml almond milk
🍓1 scoop strawberry whey protein (link in bio for 25% off MyProtein)
Lunch - 300 calories
Chicken & Veg Bake
🍗1.5 chicken breasts
🍗Mixed veggies of choice + loads of spices
Method: Chop all & shove in the oven for 20mins. Thats all!
*Swap chicken for tofu to make it vegan 🌱
Dinner - 400
Salmon & Roasted Potatoes
🐟150g salmon fillet
🐟1 cup baby potatoes
🐟Handful of spinach
🐟1/3 an avocado
Method: Chop potatoes, spray with cooking oil & microwave for 4 mins. Chuck salmon & potatoes in the oven for 20mins on 200 degrees with desired spices / lemon juice etc. Once cooked, plate with spinach & avocado. .
*Swap salmon for a portabello mushroom stuffed with 1/4 cup quinoa & lots of garlic to make it vegan 🌱
Add 2 snacks like some fruit & a few nuts or some olives during the day & a piece of choccy after dinner & you have yourself a healthy, balanced day packed with nutrients & yummy-ness!
