I whipped up a creamy mushroom and kale pasta for dinner tonight! 🤗 quick and easy meal for me to make since my back issues are flaring up again 😢 for those of you wondering, the sauce is fresh garlic, portobello mushrooms, baby kale, onion powder, dried parsley, olive oil, vegan sour cream, almond milk, and salt and pepper to taste. Cook the mushrooms and garlic in olive oil first, season, add sour cream and almond milk, then kale last and simmer until the leaves are wilted 👍🏼 sorry I have no real recipe 🤷🏻♀️ I’m the queen of winging it 😂

Spending time with animals is so therapeutic. No matter how stressed, anxious or upset I am, these beautiful individuals have the ability to make it all melt away. As far back as I can remember, I felt connected to animals. They always seemed to comfort me when no one else could. Some of my fondest memories are those spent in the company of animals.
Since I was a child, I knew I wanted to work with animals, to be a steward and protect them from harm. Yet it still took me about 17 years to realize I was causing them horrific pain and suffering each time I sat down for a meal. Despite the backlash vegans often receive from the non-vegan community, I believe that as a whole, people love animals or at least think they love animals. Unfortunately, many don’t make the seemingly obvious connection between loving animals and keeping them off their plates. People love cats, dogs and charismatic wildlife, but don’t consider the lives of pigs, chickens, cows, turkeys and goats - the “food” animals.
If you too consider yourself an animal lover, please ask yourself a question and answer it truthfully. Do you believe you can truly love animals, while contributing to their pain, suffering and slaughter? If you answer it honestly, you’ll come to the same conclusion as vegans - that in order to love animals, you must not cause them unnecessary harm and the only way to do that is to be vegan.
