Nope it’s not pesto : spinach/tofu/béchamel/Rosemary/Parmesan and it’s sooooo good it just got in my top 10 favorite dishes !
Ok.. top 20 but just because I have soooo many favorite food!
How cute is this cafe?! The mushroom risotto was probably the best vegan dish I’ve ever had, I’ve fallen in love with the 🍄 and is determined to make them taste so good. The risotto is a little heavy for 11am in the morning... maybe don’t get it for brunch.

Adapted from a recipe @mydarlingvegan... I did two drops of Doterra lemon essential oil at the end to finish off an already great dish! The fresh vegetables and lemon mix well with the vegan cheese to create a comforting dish on a cold night.
Vegan options @jo2restaurant : curried cauliflower, a veggie pistou, & a veganized coconut risotto. The cauliflower dish seemed to be more brussel sprout than cauliflower but they were both delicious so I didn’t mind. The curry sauce on it was a yellow madras style curry. The pistou was veggie filled & the broth was deliciously herby. The coconut risotto was made with a tom yum broth & might have been the best dish I had the entire trip. This place was very vegan friendly. They had vegan options on their menu (which changes daily) & options to easily veganize several omni dishes. I also had the Thai muffins but forgot to take a picture of them. They were a delicious but rich coconut oil based drop biscuitish bread with Thai red curry flavor (if I’m remembering correctly.)

Soooo, I made a pretty basic risotto with stuff I had at home. Basmati rice instead of risotto rice, replaced the white wine to even more vegetable broth added mushrooms and peas and some herbs, vegan parmesan etc for flavor. 😊 I really enjoyed it! Super yummy and simple. #vegan
