Muthafuckin’ Nachos...when I say I was craving these, I ain’t lying. They haunted and hunted me in my dreams until my tastebuds brought me to @handlebarchicago. The cheese is soooo good I had to ask the waiter a few times if he heard me say I wanted it vegan. Not picture was a strawberry fried pie with soy ice cream. This lil’ snack got devoured. @theveganbully came through with the picture and for his efforts he got a few nibbles.

1/3 onion, 1 garlic clove, 1/2 red bell pepper, 1 handful mushrooms sauteed in EVOO - diced mango and avocado 🥑#vegan refried beans, chili powder and lime juice 🍈

1. Chocolate waffles with espresso-almond ice cream 😍 and look at that dollop of coconut whipped cream! 😋
2. Triple chocolate mousse pie - The mousse was fantastic.🍫 I wasn't a fan of the pie base.
3. Sweet potato and pulled mushroom salad - delish!
4. Pulled mushroom toast - Some may find the mushroom chewy as they are attempting to imitate pulled pork. I've never eaten meat but I love mushrooms so I quite enjoyed this toast. The vegan coleslaw also tasted really good on the soft and buttery/creamy toast.
5. Pizza combo set - This baked roti pizza 🍕 was a hit so my parents ordered it every time!

7. Sweet potato, chickpea, spinach coconut curry with baked roti - Super yum! But only for sweet potato fans as otherwise you may find it a bit sweet. 😄
8. Hash browns topped with avocado and pineapple - This was good but not a must-have...similar to their Holiday Taco 🥑🍍
9. Baked spring rolls with creamy pesto - This was a miss. None of us enjoyed this dish. While ordering my dad mistook these for the fried ones at Veganerie Concept so he was even more disappointed! 😃 But we didn't care as we were enjoying the rest of our meal.

Overall, an amazing time @veganerie...so grateful for such cafes/restaurants! Nowadays, I prefer eating at vegan restaurants wherever I can: 1. in order to encourage such businesses; 2. I like the idea of a worry-free meal where I don't have to explain what I can/can't eat and keep asking whether something has meat, fish sauce, shrimp paste, etc. + no fishy/meaty smell around you; and 3. Compared to regular restaurants, they have tons of options for vegans! #winwin

good morning peeps! to kick off the first day of spring I whipped up some oattttsss of course. These are perfect for when you are running late and just need a quick breakfast on the go! these are COCONUT MATCHA BATTERED OATS!! The reason I add battered in there is because when I added a lil coconut flour they totally taste like cake batter and it is AMAZINGGGGGG!!! You have to try these out! And if you do tag me for a feat!!!
COCONUT MATCHA BATTERED OATS: mix and place in microwave for 2-3 min
1/2 cup @bobsredmill GF oats
1/2 banana smashed
1/2 cup cashew milk
2 tbsp @daiyafoods yogurt or other yogurt
1 tsp flax meal
1 tbsp coconut flour or other flour
1 tsp maple syrup
1 tbsp @eatnuttzo 7 seed butter
1 tbsp @alohamoment vanilla protein powder
1 tsp matcha powder
@baresnacks Coconut flakes

Is it the weekend yet? 🤣 I made this #massagedkale salad by mixing kale with olive oil, lemon juice and salt and rubbing the leaves until they were soft (@nutritionstripped ). I added zucchini spirals, diced roma tomato and avocado, and slices of golden beets. I topped with a lemon/mustard vinaigrette dressing.

We are starting off the week right with my fav baked oats!!! You can never go wrong with a sweet dish of baked oats, especially this mix. Today we got BLUEBERRY CHOCOLATE CAKE BAKED OATS!!! And the name doesn’t lie this legit tastes like chocolate cake with blueberries 😍😍 10/10 recommend you try out this flava bc who doesn’t love cake for breakfast!?!?!? 2 tbsp yogurt of choice (i used @daiyafoods)
1 tbsp @eatnuttzo 7 seed butter 😍 or other nut butter
1/2 tbsp flax meal (optional)
1 tsp baking powder
1/2 cup cashew milk or other plant based milk
1 tbsp cocoa powder
1 tsp coconut sugar

I live in a small town surrounded by farms, and naturally the people around here are very big into beef and pork. My coworkers are always intrigued with the food I bring to work because of my vegan diet. I’ve made them vegan cupcakes before and they have been impressed with how vegan food can taste so good!
It is my break time and one of my coworkers followed me up the stairs to see what I packed for lunch. 😉 This sandwich is filled with veggies such as red cabbage, lettuce, cucumber, shredded carrot, tomato, and red onion. I topped it with some black pepper, vegan mayo, and a light drizzle of olive oil on whole-grain bread. Filling and delicious!
