A fried base of papdi (a flakey wheat crisp) topped with boiled potatoes, raw red onion, sev (crispy chickpea flour threads), and a flutter of cilantro. Served with a sweet tamarin date and spicy coriander chutney, this bite size snack captivate with dynamic textures and bold flavors. You are apparently suppose to share this plate, but I know no rules of etiquette against hoarding them all to my selfish self.

I absolutely loved all the food I tried when I was in India, so I love trying to replicate some of the dishes. 🤩Dahl is one of the easiest/quickest ones to do 👌🏻

If there is any one thing I would wish for in Seattle that’s currently missing, it’s a killer all-vegan Indian spot. So when I hit Portland @thesudra beckons me. Our whole class has the flue for around two weeks straight now. There is not much you can do against it other than eating heahlty and give yourself a little rest. The cuisine that fits best is Indian. The huge amounts of ginger, turmeric and other spices will warm and cure yourself from the inside out. We haven't been eating a lot of veggies lately, so decided to go back to the classic #sambar for dinner with a mix of Italian green beans and cauliflower. Most people use toor dhal in their sambar but I prefer the simple masoor dhal as I like the speed at which it cooks as well as the flavor.
