With a six day week ahead, meal prep today was a must. It took about four hours for the two of us to make: yellow rice, spicy tofu, garlic sesame kale, roasted butternut squash, coconut lentil dal and creamy one pot mushroom linguine from @thehappypear PBC overnightoats, roasted pepper hummus with veg sticks. Nut free bars I made a few days ago. And there are still leftovers!!! #packedlunchpact is still a go. If I can avoid buying prepared food to save money I will.
