Loading up on yummy curry at Annalakshmi 😋 When you want to go out for a delicious vegan meal on the cheap, this is the restaurant. The beautiful thing about this place is that it’s non-for-profit, run completely by volunteers and you “pay what your heart feels”. I love this concept and wish our society could shift into this loving approach more. I’d highly encourage people to support this place so they continue the amazing work they do.
Pumpkin gnocchi with mixed veggie sauce and basil🍝🥕🌱: Gnocchi:
* about 1 cup pumpkin, puréed or mashed
* about 2 cups flour to right texture * salt and pepper
* 1/2 tsp nutmeg
* 1/2tsp oregano
* water if needed to combine
Mixed vegetable sauce🌱🍅🥕:
* 1/2 onion, diced
* 1/2 large celery stick or 1 small celery stick, finely diced
* 1 large ripe tomato, diced
* 1 medium carrot, diced
* 4 large mushrooms, diced
* 1/3 cup fresh spinach
* 2 Tbsp tomato paste
* 200-400mL vegetable stock
* handful of basil, chopped or torn
1. If you need to cook the pumpkin, chop it into about 3cmx3cm pieces and cook for 15-20mins in 200 degree celcius oven.
2. Allow pumpkin to cool down then mash with potato masher. Set aside for later as you want to get the sauce on first to reduce.
3. Chop veggies and firstly fry the onion until soft in a deep frying pan. The add all the vegetables except the spinach. Cook for a few mins until slightly softer.
4. Add some of the vegetable stock and mix, allow the sauce to reduce slightly and keep adding stock to it until the vegetables are completely cooked.
5. Add the spinach and mix until wilted.
6. Transfer the sauce into a jug or bowl and blend with a bar mix (or put in blender) until smooth.
7. Put the sauce back into the pan, add the tomato paste, seasoning and basil, leave to simmer on low while you make the pasta.
8. To make the pasta, combine the ingredients in a bowl then knead by hand on a clean bench. Adjust the flour or water in the dough until a good smooth consistency.
9. Cut the dough into four pieces and roll out on floured bench into a log that’s about 1 inch thickness. Cut into but size gnocchi pieces.
10. Cook gnocchi in salted boiling water (takes about 10-20 mins as they are dense). Once cooked strain the water and place back into the pot along with sauce. Stir to coat in sauce and serve with freshly chopped basil.

CREAMY TAHINI PULSE PASTA 🌽🌶🥦🥕. The sauce for this dish is just a combo of tahini, whole grain mustard, garlic powder, maple syrup, nutritional yeast and some water. It is the best pasta salad dressing! It’s creamy, cheesy, fresh and super savoury with that hint of sweetness to balance everything out 😋. You can have this hot or cold as well so it’s perfect for work lunches or quick and easy dinners. You just throw your favourite pasta (I use san remo pulse pasta) and add any vegetables of your choosing into the water near the end of the cooking time so the vegetables are perfectly cooked but crisp!
Buenos días!! Ayer llegué tardísimo, agotada y hambrienta!!!! Así que me preparé esta pizza riquísima para cenar 😋😋😋😋 100% vegetal. La masa de pizza es muy sencilla de preparar aunque es laboriosa, por eso recomiendo si la queréis tener comer casera que un día con tiempo os hagáis varias bolas y las congeláis. Así preparar una pizza casera será bastante rápido. Yo está vez no tenía masa hecha ni fuerzas para entretenerme con ello, así que la hice con masa ya comprada, pero natural y esponjosa. I am so happy to finally be bringing you this green smoothie bowl, which turned me onto the idea of using frozen sweet peas as a topping 😄 I had it a while ago now, but as I remember, it had fresh cabbage, and then frozen: spinach, broccoli and banana, plus some green powder, chlorella I believe, and some water to thin 💦 I then topped it with fresh banana slices, the amazing granola from @laurafruitfairy #HealthyFairyFood and then the frozen sweet peas!!
You need to try it for yourself, I absolute love having them as a topping now ☺️ they are so crisp and sweet, the perfect smoothie bowl topping 😋 and I only discovered it on a whim, I was thinking about what topping to use, didn't have much, saw them, and thought, well, why not try 😂?
Yesterday, I also made another discovery - frozen raw beetroot chunks also make such incredibly delicious snacks 😍 to me at least they taste like popsicle icecream 😆 and they look like beautiful little jewels ✨ this was also just on a whim, a while ago I got a lot of organic beers on sale, but couldn't eat all at once, so I just scrubbed and removed the dirt (without peeling), then cut them into chunks and froze a lot. I thought I would use them for smoothies, but the colour becomes quite dark with the skin still on... so as I was wanting to find a new way to use them, I just took a chunk out and gnawed on it 😂 it might sounds really weird, but it is soooo delicious 😍 I can also recommend frozen kiwi chunks (with skin of course too!), and frozen banana - I need to try this with more fruits and veggies though 😍
Have you tried just eating frozen stuff right out of your freezer? And/or have you made any chance discoveries lately ☺️? Let's all learn from each other 😇

💡 👉 It's quite a struggle to get in all the essential nutrients in especially if you're lazy or you're a busy person (work, children (not my case... ), life) nevertheless it is crucial ! Furthermore, for vegans vitamin B12 & omega 3 EPA/DHA (for everyone) are really necessary but buy either B12 in the form methylcobalamin or cyanocobalamin since both are proven to have the best bioavailability❕
In order for you to know what VITAMINS or MINERALS are the most important I put together a list of all the ESSENTIALS❕ BUT NOTE 👉 that this is my personal choice according to my own knowledge as well as research and for each individual some nutrient importance may differ since not everybody is equal 🙌
However, you should take in consideration that EVERY NUTRIENT is IMPORTANT for your overall health that's why it is so essential that you eat a VARIETY of veggies, fruits, grains, legumes, spices and herbs and don't eat only one piece a fruit a week please do me this favor 😂 IN SHORT 👉 EAT THE RAINBOW 😉 🌱

Steamed @banyanfoods tofu tamales, rice, salad, and then this Mexican slaw I made...mayn. This will be a staple in my house going forward. Shredded purple cabbage, grated carrot, sweet pepper rings, yellow guava, cilantro, red onion, red wine vinegar, chili powder, lime juice, and agave nectar. Estoy lleno.
