Lemon Curd Cupcakes. 🎂
Why is there no cupcake emoji? 🤷🏼♀️
Sweet lemon sponge base, rich buttercream icing and a little drizzle of @graces_vegan_pantry lemon curd. 🎂🍋
The recipe for these is in cups (couldn’t find my kitchen scales 🤦🏼♀️) but it works just as well. 🎂🌱
And when I say cups - I mean a standard cup or mug you use for tea/coffee. ☕️
For the sponge cupcake base you’ll need -
1 cup plus 2 heaped tablespoons of self raising flour
3 tablespoons of dairy free spread
Just over half a cup of sugar
1 teaspoon baking powder
180 mls of plant milk
3 teaspoons of lemon curd
8 cupcake cases
Possibly the simplest method I’ll be sharing - sieve the flour into a bowl, pop in all the other ingredients and mix them together until well combined. 🥣🌱
Spoon into the cases, pop in a preheated oven and bake at 170 for 40 minutes. 🕗🌱
For the buttercream icing -
100grams icing sugar
Dash of plant milk.
With this, you need your butter at room temperature to help it set. Slowly add in the icing sugar, and bring the mix all together. If you find it’s not setting, place it in the fridge for around 10 minutes.
Once your cupcakes are cool, pipe on your icing and finish with a drizzle of lemon curd.
Ta dah! Lemon curd cupcakes. 🎂🍋🌱

On my own for tea tonight and I was in Tesco earlier so figured I’d try myself the BBQ mushroom pizza from @wickedhealthy and also snagged a bottle of sriracha mayo. The pizza was ok, like I ate it but I wouldn’t necessarily spend the £4 on it again in a hurry.

Raw day 4 ✨ Dinner ~ mixed leaf salad with sprouted lentils (these were surprisingly easy to do myself!), raw tomato ‘salsa’ & @rawhealthorganic intensely Italian crispbreads 👌🏼 I have eaten a lot mangoes & raw birthday cake today so this savoury dish was just what I was craving! 🍃 I’m impressed with the amount of greens I’ve eaten so far, I’m definitely feeling the benefits of it! This morning I woke up, wide awake way before anyone else in the house & I felt gooood 🙌🏼 #therawchallenge#vibrantliving

Pasta #buddhabowl for Sunday dinner 😊 Its the same recipe for my Moroccan-spiced chickpeas, I’ve just swapped chickpeas for cannelini beans. The rest of the bowl - courgettes (zucchini) and cherry 🍅

I'd like to introduce you to Honea, the new name for our Vegan Honey Alternative. Same great flavour, with a new beautiful name!
Given the animal agricultures aggressive stance against the naming of vegan products, we have decided it is time to evolve in order to prevent any conflict.
This could have been something to fight for, but looking at the legislation I don't believe it is something we would have won.
I hope you like the new name as much as I do. At least now we have something to call our own!

@tobycarvery has three main vegan options, so if you want to go for a Sunday roast with omni friends/family you're not just stuck with the veg! Just remember to ask for freshly steamed veggies as in some restaurants they use a non-vegan glaze on the regular veggies. Have you tried any of the options? They even have vegan chocolate cake for dessert 😋

Freestyled green curry rice noodle soup .
Done in 15 min the other day .
So good and easy to make .
Corridor( corriander 😹 auto correct )
Broad beans ( no tofu in the house)
Long green beans
Blended coconut milk with the apple , herbs , ginger , turmeric and water and stock .
Heat up and add veg .
Cooked noodles separate .
Toasted sesame seeds .
I add loads of herbs and ginger so it is rich and full of flavour .
For two people I use about half bunch of basil plus half bunch of corriander plus extra corriander for seasoning , an inch of ginger , 3/4 ts grated turmeric fresh but if using powder use much less .
Soup is #oilfree as coconut milk is naturally rich and oily .
