Monday Motivated... Most people generally dislike or even hate Mondays 🙄 I used to be one of them when I worked in Corporate America. I used to say "Friday is the best day of the work week!" And of course I'm sipping hot tea from my gold sparkly thermal flask (Tupperware!!!). It is SO cold and windy here in the northeast so....... All the tea!! Ok. Now, back to work :-).
EXPECTATION vs. REALITY.🤣🤣🤣 1.) I am in desperate need of Tupperware. The Tupperware thief has robbed me of almost all of it. Lol. 2.) Ok so YES, the biggest misconception is that all the people we follow on IG are perfect, with perfect bodies and perfect lives (and matching Tupperware). 3.)This is FALSE! Life is CRAZY! Sometimes it’s hard to keep up with everything that is thrown at you, but as long as you give 110% all the time you’ll get through it! Tonight I meal prepped for the rest of the week😊🙌. Taking 18 credits, working, making it to the gym everyday, meal prepping, and maintaining healthy relationships in my life is NOT EASY!! However, it is always worth it and that, my friends, is the important part. Remember, the struggle you’re in today is developing the strength you need for tomorrow. On a side note, really dreading my 3 hour stat class tomorrow night. —Excited for this weekend though!! After work on Friday night @hopedsipler and I are going to see our boys in Williamsport for PCT Patty’s this weekend! ☘️
So happy it’s lunch time, I went for a long walk before this and came back starving! 😬 this week I meal prepped some ratatouille 🐭 with quinoa and chickpeas and topped it with some feta and pesto 😍 happy Tuesday afternoon ✌🏻
Spicy ginger beef satay with an Asian non "fried rice" and garlicky green beans.
One of the first steps to improving health is increasing the amount of vegetables in your diet. I recommend to my clients a 1 cup boost per meal. But for some, this can be a challenge. Most Americans are not eating enough veggies and those who are looking to make healthier changes find it difficult to make veggies interesting.
This meal alone contains 2 servings of veggies both hidden in the rice and the cup of green beans.
I marinated the beef round strips in braggs amino acids, minced garlic, minced ginger, Sriracha, olive oil and salt & pepper.
Roasted the beans in minced garlic, olive oil and salt & pepper in the oven for 10 mins on a cookie tray at 400 degF.
Skewed the beef and grilled in a cast iron grill pan by @lecrueset
Made a rice mixture with lentil, quinoa and pearl barley cooked in vegetable stock and added to sauteed red cabbage, onions, carrots and garlic with salt & pepper to taste drizzled in Seasame oil.
Last night's dinner= #tuplife lunch! I've been adding grains to my salads recently and I absolutely love it! It gives them an extra crunch and keeps me feeling full for longer.
This bowl has 👉🏻 quinoa, cherry tomatoes, cucumbers, a herb feta cheese blend, rotisserie chicken over a bed of arugula. I also topped with lots of Tzatziki sauce after snapping this pic🇬🇷
Meal prep was intense in the kitchen today!!! @joedinilegend and I were chopping, whisking, baking, dressing and packing meals for both our lunch and dinners this week! .
4 different dishes, 12 meals each (plus used some left overs to make another 10 meals for the freezer 😍) in 2.5 hours! .

On the menu this week:
1. Pesto chicken with a power packed, metabolism boosting veggie tomato sauce and zoodles.
2. Sriacha ginger beef satay with a "like fried rice" mix using barley, quinoa, lentils and rice sauteed with red cabbage. Onions, garlic, carrots and Seasame oil.
3. Italian sausage, kale, spinach flatbread using our own veggie sauce (packed with red pepper, onions, garlic, zucchini and toms).
4. Turkey stuffed peppers - used the "like fried rice" mixed with lean ground turkey, Panko and egg then baked for 40mins at 425degF.
I cannot stress enough how helpful meal prepping is to my week. I get it out of the way in one or two days, leaving me only 1 set of cooking dish disaster to clean up after. It makes me eat what I pack up...loading it with veggies and portioning helps me balance my meals and get in the nutrients I needs, AND saves me money!!! I'm less likely to eat out or grab something naughty bc it's already prepped waiting for me!

He is taking a fantastic leap this year revamping his entire lifestyle and skill set to make sure he is armed with the right tools to eat healthier, be more active and feel better than ever! So proud of him and looking forward to sharing this journey with you! And how can you NOT be proud of some of these dishes we whipped up today! All made and portioned within 2.5 hrs!
1. Mediterranean Bowl with Italian Turkey Sausage, Greek salad with feta, spinach and a portabella, rice and bean medley.
2. Jerk chicken meatballs from scratch with maple plantains and a mango spinach and cilantro salad.
3. Vegetarian Stuffed Peppers stuffed with sauteed onions, mushrooms, garlic, chia and kale quinoa and rice, topped with sharp cheddar.
4. Mexican Chicken Bake. Chicken breast coated in a.mexican spice mix, topped with fresh salsa and Mexican spiced cheese and scallions. Sides: baked sweet potato rounds with truffle salt and smoked paprika on baby spinach.
Am operating today which means lunch between cases.... Today’s Tupperware is full of Smoked mackerel with a salad of roasted pepper quinoa, green lentils & chickpeas.... absolutely delish!
