In a confined, popular and regularly fished fishery we can often find ourselves a little lazy and sticking to the beaten track to spots which we brand as “good enough”. However after several consecutive years of fishing the same river we find ourselves often pushing the boundaries with the curiosity of wanting to know what’s around the next corner and to find the more “hard-to-get-to” locations. Locations where hopefully greater numbers of large wild fish that may have never seen a fly could be hiding. After walking for hours past the beaten track and bush bashing through thick scrub, we found ourselves in a remote bouldery gorge with crystal flowing water. Last night's dinner - sesame crusted trout with red cabbage, watercress, pak choi and brown rice noodles - delicious and from my favourite book at the moment by @doctors_kitchen Trout - Omega 3 fats - anti-inflammatory brain food. Red cabbage - full of antioxidants and phytonutrients including Vitamin C - a boost to our immune systems. Watercress and pak choi - both cruciferous veg which help our livers work well to get rid of environmental toxins, as well as processing our own hormones such as oestrogen. Sesame seeds - tiny vitamin and mineral rich sprinkles which contain hormone balancing lignans and cholesterol balancing phytosterols. All that and more in just one dish!
