So this is what I’ve been up to these past few weeks when school started again for second semester ☺️Welcome to Plating and Pairing class! Here in this class I learned about wine tasting, pairing desserts with wines and how to plate desserts! Yes I actually got to drink wine in class 😂😂 although I really don’t like wine I gave it a try and I somewhat liked some wines we tried 😂😅😂 anyways here we have a special dessert that was made of an event called Chef’s Table were a few guests get to sit right in the kitchen and see the behind the scenes guest normally don’t see🙂 I helped make a chocolate molten lava cake with caramel, a berry coulis (I forget which berry😅) and vanilla ice cream. And next picture is a mandarin sorbet entremet which was served before the guests had their entree. The next few pictures are what we made for the regular dessert menu for the Highwood. We have some Petit Four plates, Tropical Pave(the one shaped like a coconut), Apple Mille Feuille, Paloma Panna Cotta and Chocolate Tart. And there’s a picture of what Wine tasting class looked like. Also I did forget to take picture of the daily soufflé, and the breads we made😅oops. Anyways learned a lot and had fun learning about this stuff😄 can’t wait for my next course!! Always an amazing time at The Highwood. This is some of the most amazing food I have ever had anywhere. The best part is that it's all served by students and all the food is cooked by students. Every week our second year Garde Manger students make a selection of pates and terrines for our Thursday buffet in The Highwood Restaurant. It’s a multi day process to fabricate these delicious and technical pates.
