Happy Friday 🎉 today it's the day of scrambled #pancakes in my family and my dad always makes them for dinner on Fridays 😊 but his version is the traditional one with eggs and milk and that's the reason why I tried to recreate his recipe in a vegan way and instead of dividing the pancake in smaller pieces I made good old pancakes which were extremely delicious 😍 I feel like if you use quinoa flour (I made it myself) they get super fluffy and even higher in protein 😊 do you like adding fruit like blueberries in your pancakes? As a pink dip I used @frooggies raspberry fruit powder and some apple sauce mixed together 🙈 I want to join the #blossahontas by @plantbased_blossom and @vega.hontas because they are both such incredibly sweet human beings ❤ I hope the two of you like my little pancake stack 😇 I tried to pick up the spring vibes even though the temperature here is freezing ❄ happy Friday 💕
Vanilla Blueberry pancake recipe:
▪ 100g flour
▪ 130 - 150ml plantbased milk
▪ 1 banana
▪ sweetener of choice
▪ 10g ground flax or chia seeds
▪ 100g blueberries
Combine the dry ingredients together and slowly add the wet ingredients and the blueberries. Let the mixture sit for about 5 minutes and add more liquid if you need to. Next preheat a pan and fry them on medium heat. Top with your toppings of choice and enjoy.

This thick and creamy peanut butter chocolate oatmeal is like a stovetop version of my popular brownie batter overnight oats recipe.
You can make them extra thick so they fall somehwere between brownie batter and cake batter or go for more of a traditional porridge consistency. Both are GOOOD.

This has to be my most favourite style of cooking. Mixing up spices, throwing in your favourite veggies and getting creative with flavours and combinations. 🌶
Curries are actually so easy to cook, they are full of nourishing foods and make you feel like an absolute boss when you have nailed an incredibly warming, tasty and creamy dish. Especially using all the healthy and whole foods.

happy friday my loves! hope you all enjoyed your week and have given yourself some you-time! i want to thank everyone for your support yesterday concerning my struggles, you are all so sweet and i don’t know what i would do without y’all❤️ yesterday i challenged myself a lot and ate a second clif bar with my morning snack, a whole order of takeout, a regular sugar, butter, and flour chocolate chip cookie for night snack on top of my usual eats. i increased my intake by quite a bit to try and get my mind in a healthier place. honestly, it is so hard and scary to be eating this much again. this morning i freaked out because of how i was feeling physically and i felt so guilty for what i ate yesterday. i keep reminding myself it’s the ed talking and i know how to fight back. even though i am weight restored, i have so much to catch up on. if i didn’t, i wouldn’t constantly be thinking about food, have osteoporosis, and be 18 and still not have my period. these are all signs that i still need more and that i am still in energy debt. i need to give myself extra so that my body can trust that it really has a surplus of energy to support the repair of all of these aspects. i can do this 💪

I’m back! Indtil videre er Ella rigtig god til at sove 👶🏼 Vi har hængt en vugge op i mellem stuen og køkkenet, hvor hun sover rigtig godt i løbet af dagen, når hun ikke er i viklen. Det giver mig tid til, at komme lidt i køkkenet. Forleden bagte jeg koldhævede speltboller med mandler og havregryn. Tja, kan vidst godt kalde mig for speltmor 😅 Jeg holder ikke igen med kulhydrater når jeg ammer (gør jeg egentlig heller ikke normalt), så en nybagt bolle med smørbar er altså ret lækkert. It is so damn nice being able to eat dinner when it's light out now 😩👏🏻💯 Tonight I had arugula, topped with sautéed kale and broccoli slaw with tofu and sweet potato, all topped with a drizzle of @thehoneststand Vegan Spicy Nacho Dip (you NEED this in your life) and a sprinkle of @traderjoes everything bagel seasoning! I'm done class for the week and ready to relax and take it easy this weekend 😊 Hope you're all having yummy Thursday night dinners too!!
Chocolate strawberries anyone?! I highly recommend @enjoylifefoods vegan chocolate chips. If you don’t have those, you can also melt cacao, almond butter, and maple syrup in a small saucepan- mix together- dip strawberries in mixture then into coconut flakes or chia seeds. Freeze. Enjoy!!!
Crispy sweet potato rounds make a perfect stand-in for tortilla chips in this loaded nacho recipe. We topped ours with vegan "cheese" sauce, avocado, corn, black beans, and salsa. A M E N 🙏🏾 es todo lo que le digo a este plato!! ¿Qué es ? Es risotto de remolacha, cogí la idea base del libro de @deliciouslyella que lo hace con sarreceno, lo adapté a lo que tenía y me gusta! El resultado fue este increíble plato 😍😍
La receta :
1 tz de arroz arbóreo
3 tz de agua .
Pones en un sartén estos ingredientes a fuego alto hasta que hierve, luego lo dejas en bajito hasta que seque y esté el arroz ya cocido.
⭐️Para la remolacha :
La haces ahumada ( mira el paso a paso en las historias en mi perfil)
Luego las trituras con 1 tz de leche de coco y el zumo de medio limón, en el procesador y sal. 🌟Cuando el arroz esté listo, unes las dos preparaciones revolviendo muy bn y calentando.
1/2 libra de champiñones cortados en láminas 1 cda de vinagre para sushi, 1 cda de soya , 1 cda de cúrcuma 1/4 cdta de comino. Revuelves, dejas marinar mientras haces la primera etapa del arroz, y luego tiras todo en el sartén hasta que doren y queden secos.
Acompaña todo con un poco de perejil y unas nueces de nogal caramelizadas !! 😋😋
You can’t compete with me in terms of air-headedness lately and I’m not even kidding. Let me tell you, today is a rainy day and it called for something hot, spicy, and delicious. Mainly a celebration for the rain but also, I love Indian food. This dish is called chickpea curry in a hurry. Cute, huh? It tastes delicious and you are going to love it. But It has recently come to my attention that this title is problematic for two reasons. Number one, @joelfuhrmanmd apparently already has a recipe that he calls chickpea curry in a hurry. I’m sure I heard this title at some point along the lines, forgot where I’d heard it, and then thought I was being incredibly clever when I came up with it myself. (Newsflash I didn’t come up with it and I’m not that clever) SO that’s “Doh” numero uno. The second is far more entertaining. Ready? So... The spices in this dish include Garam masala, cinnamon, cumin, and red pepper. Doesn’t that sound delicious? No curry. I repeat: THERE IS NO CURRY IN MY CHICKPEA CURRY IN A HURRY. You can’t make this stuff up, guys. Time to reinstate the routine 10 minute power nap? #ithinkso

Seems like one of the things that’s missed most after going lectin-free is bread-y items.
