Love this dish from my Sunday night prep for the week.
Roast chickpeas in spice mix for 40mins.
Cool, then add sundries toms, olives, loads of parsley, spring onion, garlic.
Whizz up a dressing of fresh mint, acv, lemon oil, & maple syrup.
Combine all together in a bowl and enjoy.

Parsley "Aioli". Apparently this technically isn't aioli ("garlic and oil" usually with egg) in the truest sense of the word. A simple healthy spread that I've made for decades. "Aioli" sounds better than "parsley sauce", or "I wish I had basil, but I don't" sauce. Sunday meal prep. A mushroom and asparagus, cheese, and Teton waters mini hot dogs casserole, 4 egg cups with mushrooms, asparagus, and cheese, (extra egg yolks), and a whole chicken I made in the instant pot with resulting bone broth as well. The egg cups were made in the instant pot as well. I will add a tablespoon of butter to them when I warm them up. A side by side of my casserole creation this morning! This is a yam and apple bake, with layered pieces of each in a baking dish greased with coconut oil. I added a mixture of unsweetened apple sauce, cinnamon, sea salt, Splenda Brown sugar, a drizzle of pure maple syrup, and walnuts to top it off. Baked for 50 minutes, and voila! An added bonus is my house smells amazing from this tasty treat! 🍎🍠🍏🍠🍎
Another Sunday another meal prep afternoon.
Lunches for the next 3 days for my husband and I:
🥗Salmon with quinoa salad
100g quinoa, cooked
50g kale, chopped
50g baby spinach
Half capsicum, chopped
Half red onion, diced
150g feta chopped
1 tomato, chopped
1 chilli, chopped
Chives, basil, mint chopped
1 garlic clove, minced
Half lemon, zested
1 tsp Dijon mustard
30g olive oil
1 TBS vinegar
1 sweet potato, baked
400g salmon fillets, cooked (fry, oven baked, steamed) 🍳 Preprepped omelette so the bag can simply emptied into the pan with eggs and save on chopping time. Baby spinach, red onion, mushrooms, capsicum, feta, chives.
