Warm Thai coconut curry soup for cold LA nights! I didn’t really measure any ingredient I cooked in coconut oil lots of turmeric, curry powder, red curry paste, coriander powder. Then add some veggie stock (not too much) and sauté the veggies. Add more veggie stock and coconut milk. When life gives you 10 lbs of carrots, make carrot ginger soup. It was absurdly warm today (80F in Feb), but that didn’t stop me from this deliciousness.
Question for you all -- would you have this soup chilled? I tried the leftovers straight from the fridge today, and it was surprisingly refreshing (although I prefer the soup heated). A carrot gazpacho of sorts, sans tomato.
I posted a similar recipe in the past (with harissa), but here it is modified below:
EASY vegan carrot soup with coconut milk.
- 2 medium onions diced
- 1.5 lbs carrots, peeled and cut into thin coins (~quarter inch; the smaller, the faster they cook down)
- 4 cups veggie stock
- 1/2 cup coconut milk
- 1 tbsp grated ginger (~1 inch knob)
- 2 tbsp olive oil
- Salt and pepper. Toasted white sesame, scallions, extra OO optional.
1) Cook onions with oil in stock pot until translucent on low/med heat (~15 minutes).
2) Add in carrots and ginger and cook for another 8 minutes on low heat, stirring frequently, uncovered
3) Pour in stock and coconut, bring to a boil, and then simmer until carrots are soft (~20 min)
4) Blend in blender. Add more stock if you'd like the consistency less thick. I left it pretty chunky in this case, but for ultimate creaminess you can use a blender and even run it throw a sieve.
There's nothing more comforting than a bowl of pasta fagioli soup sprinkled with parmesan on a chilly damp night with crusted hot bread slathered with butter and a glass of vino. My Tuscan dream.
