I always seem to go to Holland and Barrett just after a good offer has ended 🙄😤. But I did pick up these bargain fishcakes to try and got some cheap burgers and sausages (99p each). Think these are the sausages @hetface said were good? 🤷🏼♀️ Always exciting trying new vegan stuff!
homemade sushi was on the menu for lunch today 😜 made these with nori rolls, homemade hummus, rice, pepper, cucumber, chickpeas, mushrooms and a dipping sauce made from gf soy sauce, red pepper chilli flakes and sesame seeds! 👌 Really enjoyed this as a meal and am slowly improving my sushi rolling technique...😂

Found this recipe via @playitisvegan for 2 ingredient vegan cookies and thought, this has my name written all over it (SO EASY) you just blend a banana with 3/4 cup desiccated coconut, bake for 22 mins and BOOM delicious sugar free cookies, what more can you ask for? I have to confess I added a few extra ingredients (cashews and a dollop of cashew butter) and then I melted some dark chocolate 🍫 and dipped the bottoms of the cookies in it before putting them in the fridge (I needed chocolate) and I was not disappointed 😋 Swipe to see how I made them & what I used 😊
One-dish Vegan dinner a few nights ago. Salad and brown rice w/Vegan mayo, crumbled tempeh, and avocado! I remember back in 1983 as a Vegan. There was this restaurant and healthfood store on 3rd Street called Organicville. It was so homey and real and ran by a guy named Steve who was either a genius, nuts, or both. My favorite and only meal at the food counter was coleslaw salad w/Vegan mayo, brown rice, and carrot juice. Oh, and occasionally one of those giant Vegan cookies they baked! I was fit, a Yogi, a runner, a swimmer, and smoking HOT! 😜 LOL. I did not spend a lot of time fussing about food. It just had to contain NO animal products or by-products and be simple and I was cool! Back then, there were less debates about plant-based diets. No one feared tofu or called carrots hybrid foods. When I sat and ate this plate of food a few days ago, I remembered. Then, a few hours later, I went to bed very happy with a smile on my face. I have lived as a Vegan 40+ years with mostly the same point of view and I feel good. I am still a very happy Vegan. No deprivation happening over here!
Another cecispinaci (chickpea and spinach) dish - wholewheat noodles edition 🍜
* boil your noodles of choice (I used wholewheat as they don't get too slippery)
* once ready, drain and add a drizzle of olive oil, chickpeas, and spinach, which will wilt with the heat
* season with salt, paper, and the secret ingredient (nutritional yeast!)
* I also added chili flakes, which gave the dish a nice spicy kick
* if I had a lime or lemon, I would suggest squeezing some of that juice over the noodles
