HL: This cashew chicken and broccoli stir-fry inspired by @savory.tooth is sooo good. Nothing fancy, but its simplicity is what makes it an attractive option. Everything in one pan, and it took me less than ⏰30 minutes from start to finish. Found a keeper!
*Dice your chicken evenly, otherwise you may end up with partly overcooked chicken😌, like I did
*Experiment and tweak the flavor according to your tastes. I made a few adjustments of my own, and eyeballed the serving sizes. Thankfully it still turned out great.
*According to @savory.tooth, if you have no Sriracha sauce, you can substitute it with any kind of sweet garlic chili paste.
FULL INSTRUCTIONS BELOW:
CASHEW CHICKEN & BROCCOLI STIR FRY:
INGREDIENTS (2 servings):
1 pound boneless skinless chicken breasts chopped into bite-sized pieces
4 cups small broccoli florets
1/4 cup cashews
2 tablespoons oil
For the sauce:
2 tablespoons low-sodium soy sauce
1 teaspoon sriracha
2 cloves garlic minced
1/2 teaspoon ground ginger
1/4 teaspoon coarsely ground black pepper
1 tablespoon sesame oil
1 teaspoon sesame seeds
1 scallion thinly sliced
Combine sauce ingredients in a small bowl and stir to mix well. Set aside.
Heat oil in a pan over medium-high heat for a few minutes. Add chicken chunks and broccoli. Cook until the chicken is cooked through and the broccoli is tender, 5 to 10 minutes, stirring frequently.
Decrease heat to medium-low. Evenly pour sauce over the chicken and broccoli, immediately stirring until well-coated with the sauce. Stir in cashews. Cook for another few minutes to thicken the sauce a bit, stirring occasionally.
Turn off the heat. Top with sesame seeds, scallions, and sesame oil. Serve immediately.
