This Pulled Pork feast was more a “round 2” of the BBQ sauce testing then a meal. With all the feedback from the tasting panels, we’ve narrowed the initial 7 down to 5 (KC Style and Tandoori are out). The pork was slow cooked, seasoned with salt, pepper and a bit of crushed garlic on the plainest Italian bread we could make. The point was to really see how the sauces take to the meat without any outside flavors coming through. On the initial testing a week ago, the sauce was fresh. Now, the point was to see how the flavors and consistency matured over a week in a chilled environment. The results were interesting to say the least. The forerunners currently are:
Sweet & Smokey - the sauce thickened up nicely with the smoke subtly accenting the sweetness on the backend.
Bourbon Whisky - Thickened up a lot. A thick sweet sauce with the tang of the bourbon mellowing out slightly. Future batches the onion and garlic will will be processed a lot finer.
Sweet & Spicy - in initial testing, this started sweet and the heat sneaks up fast and strong. After a week chilled, the sauce thickened slightly and the flavors mellowed quite a bit. The heat is still there, just not as powerful.
Cajun - this sauce changed the least, thickening just slightly with the spicy blend just mellowing slightly.
The testing continues until a winner is chosen to represent Bite Club! And to “cleanse the pallet”, a bottle (or 4) of @smalltownbrewery newNot Your Fathers Fruit Punch! Amazing smooth taste...Bite Club is a massive fan of all their products!
