Soups and Buddha Bowls (or One Bowls or Bowls...or whatever you like to call them). If you were to ask me what I really eat... I'd give you an honest answer and say smoothies, soups, salads and Buddha Bowls.
These are my go-to meals.
Don't get me wrong, I've obviously made all the other recipes on my blog and plenty more but, like I've said time and time again, I like simple and easy meals that don't require a lot of ingredients or time in the kitchen.
Hence, soups and Buddha Bowls.
So, at the start of each week, I like to do a little batch cooking.
I make a soup and I'll prep some grains to use in my bowls for the week.
And today, I'm sharing with you one of my favorite ways to prepare grains so come Sunday, you have some new recipes in your holster.

This is my super simple Tex-Mex Rice. I love putting this in Buddha bowls with beans and fresh veggies. One thing I love about adding grains to your bowl is that it fills you up AND it makes eating raw veggies so much easier.

With having 4 littles we don’t always get a date that’s out of the house... so we make it a point to have date night in — we get our boys tucked in earlier (they may still be awake, but they know it’s date night), I make a meal that is new to us, or takes a little more effort than our avg night. The other night I made us up a plate of Sweet Potato Nachos + Avo Salsa with beans + “cheesy” Cashew Sauce — these Nachos were delish and will be added to our “👍🏼👍🏼 meals”
I want to encourage all married couples with littles... if you cannot get out of the house for a date weekly, make it a point to have date night in! It could be the same night every week, or a night you both decide on at the beginning of the week! You will thank yourself at the end of the week! •
Tonight is date night in for us!
