So Purim is coming (somewhat of a Jewish Halloween)... Are you excited? 
Or nervous? Nervous about the overwhelming amount of food, treats, partying?

Purim has always been one of my favorite holidays; I love the festive atmosphere that is heralded in at the beginning of the month, the costumes, the food.

But, I have always been overwhelmed by the amount of chocolate and candy and not knowing how I would stay in "control." Should I skip breakfast to "save" calories for later? Could I eat a cookie for breakfast? Treats in the car? And how about dessert at the end of the meal?  I remember nausea I felt from eating excessive amounts of chocolate- as if this was the last day I would EVER eat chocolate.

So friends, listen to my advice for myself and maybe you'll receive some calm. 
Number 1: Enjoy the day! Focus on the importance of the day- we experienced a miracle! This is a happy time. Let go of your food anxieties. Even if just for today. 
Number 2: Enjoy the food you eat. Regardless if it's a cookie, piece of steak, or a large salad. Try and sit while you eat. Eat when you're hungry. Remeber, there will still be food around tomorrow so try to stop when you're full. Even if not...
(Number 3: )One day of wacky scheduling causing weird meal times and snacking, will NOT make you unhealthy. (barring any health conditions already present. For example, someone with diabetes must still take insulin if required) 
Number 4: Eat breakfast. YES! I know you are busy, have some protein too. With your cookies. Or whatever you are eating for your am meal.

Number 5: If it helps you relax and feel good, go exercise. Not to "burn" off the food you're eating. But to be healthy and calm. 
Number 5: Stay hydrated. Drink water. There is a lot of running around, and you will be thirsty! Bring some water while you go to deliver shalach manos. 
I hope these tips help give you peace of mind and calm as we experienced collectively through the Purim miracle so long ago.

Definitely didn’t help that I soaked the cashews for 3 minutes instead of 3 hours (impatient) BUT the crust was dank af.

An update
In the span of one month actually attempting to put on weight....I’ve gained a total of pound pound 😂😂😂to some this is not an accomplishment but I am proud! My body is already giving off the signs that I’m finding better health and balance. 
In terms of stress levels, I am not exactly zen, but damn-I am way more chill than a few months ago. 
My body and mind are finding balance. I encourage each of you to make those changes to do achieve your own happiness. —

I for sure learned my lesson about impulsive buys. I’ve never been good at following recipes so here’s roughly how I made this:
1 very large sweet potato (peeled, diced, roasted and puréed)
1/2 cup cocoa powder
1/3 cup @enjoylife chocolate chips
2 1/2 cups gluten free flour
2/3 cup agave 
1/2 cup coconut oil 
pinch of sea salt 
1/4 tsp baking soda

This isn’t a food pic and probably seems irrelevant to this account. However, it does a good job at portraying my intuition. I have been told my entire life that I have a bizarre taste in decor and style, which I own up to. Lots of shapes, lines, out of the norm colors, and balance. My house isn’t in perfect shape but I love to decorate with the element of balance. As I’ve listened more to my intuition I have felt that my style has been a way for me to release the balance I so desperately needed to survive. I found this artwork jem, and thought it would be perfect for my dinner table. It reminds me that life is hectic, my foods aren’t always balanced, things are out of order, and I often branch out into places way outside my comfort zone. But, what this piece also reminds me is that after all the chaos, I’m still standing. I don’t have to live a perfectly habitual life to be beautiful, inviting, or a piece of art. I can live and do on a whim, and still be standing.

✨A MILLION DREAMS ARE KEEPING ME AWAKE✨ No, really. I was up at 4:30 this morning 😂

It's funny, because only a year ago I was in such a different place. As a senior in my dietetics program, I felt like I lacked purpose and motivation. I had no idea what I wanted to do with my life 😳 Instead of chasing dreams, I struggled just to get out of bed.

BUT HOW THE TABLES HAVE TURNED 🙌  Yeah Girl! Nutrition has given me an outlet to share what I am now SO passionate about, which is helping people feel confident & positive about the food on their plate. You guys, I can't tell you how much FUN this is! I love taking about food & nutrition. I love this community. I LOVE that this keeps me up at night because I have endless ideas running through my head. I can say with certainty that I have found my passion 😭🙌💕 #thankyouGod 
If you feel like you're in the same situation I was in last year, my one piece of advice is find what you're passionate about, and give a little energy towards that everyday. Start a blog. Join a club. Volunteer. And then watch what happens! 😜

👩🏽‍🍳 cooking demo today with my foodservice rotation @consciousbitecatering at @pureformulas! Thank you for having us! It was a pleasure teaching your wonderful staff about fiber. We made very easy black bean burgers and a chickpea and kale salad. .

🍔Black Bean Burger Patties: 🍔
.
• 1 can black beans, drained &rinsed.
• 1/2 red onion, roughly chopped.
• 1 lime, juiced.
• 2 T fresh garlic.
• 1 T cumin.
• 1 T chili or chipotle powder.
• 1 T garlic powder.
• 1/4 C chopped cilantro.
• 1 egg (optional, for consistency).
• 1 cup whole wheat breadcrumbs. .

*save 1/3 cup of breadcrumbs for shaping the patties. 
1. Throw all ingredients into food processor until puréed. 
2. Lightly coat your hands in oil to handle the purée; begin molding it into patty shapes. 
3. Coat patty evenly in breadcrumbs. 
4. Pan fry in your favorite oil on med-high heat for about 2 minutes on each side.
5. Serve with your favorite burger toppings and enjoy! . **pro tip: you can make a tray full of these and freeze them; this will make them easier to work with when cooking and you’ll have easy meals for days to come! .

Snackin’ on my FAVORITE tortilla chips and some homemade guacamole this lovely Saturday afternoon. I’ve never found tortilla chips so salty and addicting. They’re completely gluten/grain/corn/soy free and made with cassava flour, coconut flour, avocado oil, and chia seeds. Can’t get much better ingredients than that! I hope everyone is enjoying their weekend 💚

Baked tofu is one of our top easy proteins to have on hand during the week. Plus our meal prep recipe is easy👌!!
We use organic extra firm tofu (completely drain by slicing block into fourths and putting on a plate with a paper towel and something heavy on top for 15-20 mins). Once drained cut into cubes and toss in a bowl with soy sauce and garlic pepper. Bake at 400 degrees for 30-40 minutes on the top shelf (tossing halfway). Cook time depends on size of your cubes and how crispy you like your tofu 😍.
