happy thursday everyone! i hope y’all had a great start to your morning and didn’t experience any pancake casualties like i did🤨 for some reason my pancakes turned out all wonky and totally fell apart when i first made them, so i had to remeasure all of the ingredients and redo the whole process which was a drag😩 but it was totally worth it, cause this stack turned out so fluffy and perfect🙌🏻 the reason i am sharing this with y’all is to show you that my food doesn’t always turn out perfect first time around, and there’s so much more behind the scenes than what i post in my pictures!
i also want to be transparent about how i’m doing mentally— not so good. the past few days, the ONLY thing i can think about is food. what i have eaten, what i am going to eat next, what i will allow myself to eat, what i feel bad about eating. it’s the same thoughts that i had a year ago, they’re all coming back. i have been using my food scale rigidly again, and i am making my own personal meals again at dinner. i did some (or a lot) of research last night about this topic, and what it comes down to, is that i haven’t been giving myself enough f u e l. i need to remind myself: even though i am at a healthy weight, my body is still in severe energy debt, and my brain still has so much repair work. my obsession with food is just a biological side effect of restriction!!! would you guys be interested if i wrote an in depth blog post about this topic? i’d love to hear your thoughts! hope you all have a lovely day💗

Dairy-Free (and egg-free) Crepe-Style Protein Pancakes! 😋 Recipe below and in the #ProteinPow cookbook (page 155)🎉
As a lot of you guys probably know from personal experience, it’s not easy to make any sort of crepe/pancake without dairy and eggs, but after a lot of trial and a heap-ton of error, POW! 🌟 These babies were born and they can be born in your kitchen too 👌 Give them a go! Whether your'e vegan or not, they're a fun way to mix things up in the world of breakfast 💁 Recipe below (or just turn to page 155 of the new Protein Pow cookbook, woop!):
1⁄4 cup unflavored pea protein powder (I used our #proteinpow one because it's smoother and less savory than others out there)
14 tablespoons almond milk
1 tablespoon vanilla bean paste
1⁄2 cup self-raising gluten-free flour
Coconut oil or non-calorie cooking spray (for the pan) .
1. Using a handheld immersion blender (or a small food processor), blend together all the ingredients, except for the coconut oil, until you get a smooth thick batter.
2. Add a teaspoon of coconut oil or non-calorie cooking spray to a nonstick pan and heat the pan to high.
3. With a spoon, spread half of the batter until it covers the entire surface of the pan. Immediately turn down the heat to medium-low.
4. Flip the pancakes as soon as bubbles begin to form on the surface.
5. Repeat cooking steps for the other half of the batter.
6. Serve with your topping of choice and enjoy!!!! 😊🤘

I tried to swap out my lunch for a diet whey protein shake but I’m too weak to do any labour later in the day, and let’s face it, that’s what helping on a farm is about! So I thought I’d find an alternative use for the protein powder.
They’re pretty good actually, really light and tasty. Not too sweet or rubbery, which the pre-made pancake mix can often be. I used to have the MyProtein golden syrup pancake mix and struggled to get it down my throat..
Anyway these are made with one scoop of diet impact whey in chocolate, a small banana, one egg, a good slosh of almond milk, tbsp of cacao (I had to use cocoa so used less) and 1/2 tsp of baking powder. All in the blender and blitzed!
I’ve topped with crunchy PB and some frozen berries because I never defrost.
