Creamy White Bean Shells with Broccoli
2½ cups small shell pasta
1 tablespoon extra-virgin olive oil
1 small yellow onion, chopped
5 cups broccoli florets, chopped stems, and leaves (keep stems separate)
¼ cup toasted pine nuts
lemon wedges, for serving
For the white bean sauce:
1 (14.5-ounce) can cooked white beans, drained and rinsed
¼ cup vegetable broth, more as needed
3 tablespoons fresh lemon juice
2 tablespoons extra-virgin olive oil
¼ cup nutritional yeast*
1 garlic clove, minced
¼ teaspoon onion powder
½ teaspoon sea salt
freshly ground black pepper, to taste
Make the sauce: In a blender, combine the white beans, broth, lemon juice, olive oil, nutritional yeast, garlic, onion powder, salt, and pepper, and blend until smooth. Set aside.
Bring a large pot of salted water to a boil. Prepare the pasta according to the instructions on the package, cooking until al dente. Drain and set aside.
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the onion and sauté until soft, about 5 minutes.
Stir in the chopped broccoli stems and cook for another 3 to 5 minutes or until tender. Add the broccoli florets and leaves and a splash of water or vegetable broth. Cover and turn off the heat.
Allow the broccoli to steam for 2 to 3 minutes or until tender but still bright green. Add the pasta, then stir in ¾ of the sauce, adding more broth if the sauce is too dry.
Season to taste with more salt, pepper and lemon juice, as desired, and portion into bowls. Divide the remaining sauce onto each bowl. Top with the pine nuts and serve with lemon wedges on the side.
Notes *If you don’t have nutritional yeast, you can substitute with freshly grated parmesan cheese.

I also have a passion for mentoring the youth through what I tag, ". Personal Social Responsibility". -

Business Etiquette Rule:
Keep the table clean. Meaning, do not put anything on the table. No purse, no keys, no cell phone. Put it in your coat or your purse and keep it out of sight. Also, check your coat in at the coat rack or place on the back of your chair. You want a clean space that is just about the food and your company and nothing else.
A #throwback on a Monday. Because between moving, school, work, and business, I've needed some extra time to get it all together and be back into a working routine. I've felt a little lazy and a bit discouraged honestly because there's so many thing I need to attend to but "life happens". Taking a break is fine, but giving up is not. Especially when your children are watching because we teach them to dream best by living our own.

Some cool news in the bottom. Are you following your truth? My IG Live last Thursday was about this topic, I love this topic of #growyourwingsbydeana tag. This is where you go "Deana, is there s topic you don't like?". Answer: "Well, you got me there". ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Truth is something that comes before goals. It is the solid base for everything we build in life, that base that protects us from drastic realizations in the future. If you were to build a house, you would rather have a strong base. Same here. Our personal strong base is our truth.
Truth is living life out of your own values. We could sometimes get swayed by the shiny outside life, see somebody else's success and try to use their success algorithm (however, end up in the same spot unmoved). Truth is understanding your own success algorithm. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1. Curiosity. If you follow your own curiosity, you will absolutely surely end up uncovering something much deeper. You may uncover a passion (!!!). Curiosity leads deep into the treasures of your soul, go there.
2. Emotions. Negative or positive emotions tell you if something is against or for your truth. Follow what feels good and avoid what does not. Only you know your own emotions, take your time to listen to them and respond. Don't force yourself to adapt and live with negative emotions, change the environment that causes them.
3. Intuition. Deep down inside we actually know the answers to many questions, but we question our own authority. Maybe go to different advisors (friends, family, etc.) and look for answers outside. You know how this people come up with answers? They listen to their intuition, which is a base for THEIR truth. Most likely, their truth is different from yours. Would not it make sense then if you listened to your own intuition? Only your intuition knows your truth. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Sometimes we all need a reminder that you can do anything you put your mind to! I reflect back on 2013-2016. It was one of the hardest periods of my life.
I was trying to figure out my life and bounce back from being fired. It shocked me to the core!
I moved from Vegas to Charlotte and reinvented myself and changed careers.
My lesson you are better than where you are. It will get better and the sun will rise again🌞.
Let last week remain in the past. Let the past hurts remain in the past.
