Stir fry’s are my go to meal 🥢
They are so simple and quick to make. I usually just throw whatever I can find into it and it turns out looking something like this - chickpeas, mushroom, homegrown cherry tomatoes, broccoli, spinach, kale, parsley and coriander. I also squeezed some lemon juice on top and cooked the stir fry with coconut oil and ground cumin

3/20/18 Tuesday night dinner. Happy birthday dinner for the hubs! Made him his all time favorite meal...burgers and fries! He was such a meat and potatoes guy so for him to be #vegan it’s huge! Going on almost a year and half now and so darn proud of him! I wanted him to do this for himself but he really did this for his family. Wants to be around as healthy as possible to take care of his fam bam. Tonight to celebrate I made burgers from @beyondmeat, roasted red potatoes, onion rings, and salad. We will celebrate more this Friday when both girls come home for dinner. Happy 51st bday hubs (Whoah just realized that’s 27th bdays with him) Here’s to many years of health, joy, and love. ❤️❤️❤️

Checkout this protein packed Beetroot Hummus recipe on plantproof.com. You can also blend in hemp seeds to load up the protein and healthy fats a bit more.
All in all a healthy snack alternative to chips, high sugar drinks, chocolate, scrolls , croissants etc. I like to vary my hummus so one week I’ll make Beetroot, the next regular, the next maybe a basil or coriander hummus etc. Varistion is a good thing! ⠀⠀⠀⠀⠀⠀⠀⠀
Plant Proof tips: Buy organic beets where possible. Use healthy 100% natural crackers for dipping (like falafel chips) or even better fresh carrot and celery sticks. If you have kids the earlier you introduce them to such foods the sooner they will grow to love them. Lastly don’t throw out the leafy greens from the end of the Beetroot, they are jam packed with iron, zinc, fibre and antioxidants...Save them and add to a salad, trust me! ⠀⠀⠀⠀⠀⠀⠀⠀
These wraps are super simple and REALLY good!! The next two pictures show the wraps and the dairy free cheese, @fieldroast that I used. SO GOOD😋
Here’s how to make👇🏻 •••••••••••••••••
•1 zucchini, ends removed and sliced long ways
•cherry tomatoes, halved
•red onion slices
•1 cup kale, stems removed and chopped
•2 slices cheese( I used dairy free)
•Kalamata olives, halved
•wraps ( I use Indian life)
1. Toss zucchini strips in a little oil with salt and pepper. Put on a grill or grill pan and cook for 3 or so minutes on each side.
2. Warm up the wraps and spread hummus out
3. Layer with cheese, zucchini, kale, tomatoes, onion and olives.
4. Wrap up!🌯

Was I happy on the left? Sure! You could call me happy, and I faked it real good...but I wasn't. I hated myself and how uncomfortable I felt in my skin. For me as an athletic child growing up playing sports and always running around, this body just didn't feel right. I was in my 20's working at a dive bar, eating all processed and fried veggie bar food, drinking soda all day and liquor all night. I would stay out all night, party and sleep all day.
Now I'm in my 30's and truly happy. I found myself again through clean whole vegan foods, drinking water, and moving my body. I have an amazing supportive boyfriend and a sweetheart puppy. I want to do all I can to stay healthy and be around for them for a long time. I am in the best shape, I have ever been in. And I'm not done yet.
This represents hard work and happiness, both inside and out. It's not about thick or thin. It's about how I can walk up stairs and not get winded, how I can push through an intense workout and know I can do hard things, it's about my little community of friends who are there with me and all stick together to lift eachother up.
It's about knowing that how I feel is up to ME. I am the only one that can control that. It's making better choices and choosing happiness and positive outlooks in any situation. It's about freedom. I love all of you so much, thank you for cheering me on. I'm cheering for you too!! Let's live our best lives, whatever that means to us.💕😍😚 #teamac#80DO

I’ve been drinking this stuff for a little over a year now and it’s become such an important part of my nutrition. Its the easiest and healthiest meal I can make for myself! It’s helped with my coffee addiction, my sugar cravings and I just feel on top of my game when I drink it. The taste ain’t that bad either 😋 .

WHAT ARE YOUR FAVOURITE VEGAN BRANDS & INSTAGRAM PAGES?! Tag or comment them down below! 🌼 Some of you may know I was plant based for a couple of years up until last year. Recently though I have been thinking about transitioning back into being more plant based again. I honestly think both lifestyles (plant based and eating animal product) have pros and cons, some more personal to me, I want to slowly take it back. Appearance for me is something I’m really conscious of and I can honestly say that I was gaining weight, not gaining the muscle I wanted and my skin was terrible back in the day but I believe that was due to the way I was eating - high carb, low fat - which I have since learnt I don’t run optimally on. This is why I want to take it slow, I need to learn how to eat the way I have found my body thrives but in a more friendly way. I can’t say that plant based living will definitely be a forever thing but something is always better than nothing. I have always been super honest with those who have asked about my journey/why I strayed away, so if you want to understand further, just ask ✨ Right now I have at least 1 vegan meal a day which this week has been my TVP Chilli Con Carne with Greens & Rice. Do you ever find yourself down? Well, that’s a silly question because we’re human! It’s in our DNA to not feel/be perfect all the time! We all have days where we’re feeling blue, and that’s perfectly okay. If you ever want to clear your mind, body, and soul I recommend this: GO OUTSIDE! •🌲
Really, be out in nature. Smell the beautiful fresh air, look around and bask in the ambiance of nature. It’s incredible! I can be having an awful day, but once I’m surrounded by trees and listening to the sounds of nature, it reminds me how small my problems really are. It clear my mind and rejuvenates me entirely!
Some people say fitness and diet are key to a healthy life, and they are, but there is n o t h i n g like spending 30 minutes with nature. It’s good for your mental health, spiritual health, physical health, and every other kinda health their are! Take my word for it and go for a walk! Open your eyes, really take it all in and realize that your problems are only as big as you believe them to be.
