While I’d say i am a better cook than i am a baker (serious props to all you bakers out there making delicious treats like it’s nothin 😱), i have been tryin to work on my baking skills as of late and whipped up these Peanut Butter Oatmeal Cookies yesterday! 🥜 Aka my two fave things in the world combined lol. The recipe is vegan, gluten free, and so dang easy to make, hope you guys give it a shot 🤗
Now off to finish a four page paper that’s due tomorrow and once again face the consequences of #procrastibaking 😅
Peanut Butter Oatmeal Cookies 🥜🍪 (vegan and GF):
- 1/2 cup drippy peanut butter (gotta be drippy!)
- 1/4 cup coconut oil
- 3 tbsp unsweetened applesauce
- 1 tbsp maple syrup or pure honey
- 1 tsp vanilla extract
- 1 cup rolled oats
- 1/3 cup @bobsredmill 1-to-1 GF baking flour
- 1/4 cup coconut sugar
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp cinnamon
- pinch salt
Preheat oven to 350F.
Combine all ingredients in a mixing bowl, roll into balls, and line on a cookie sheet covered with parchment paper.
Slightly press down on each cookie to flatten out a little, but make sure none are touching.
Bake for 10-15 minutes and let cool on a rack before eating!
I made Kimo and I crepes for breakfast earlier. I used the crepe recipe from @theshrinkingmomma which is: mash one banana🍌w/ fork, whisk in two eggs, then I added 1 TBSP of maca root powder and some cinnamon. You mix all ingredients together then pour mixture onto a non-stick large frying pan (I sprayed pan with TJ's coconut oil spray first) set at medium-high heat. Then, wait until the edges of the crepe are golden brown. To flip the huge crepe, use a paper plate/plate -- not a spatula as it will screw it up (trust me). After you flip it, it cooks pretty quickly. (Check out my crepe post from this past weekend -- if you swipe there's a video of how to flip the crepe. Major technique). Then, just put the crepe onto a plate like a large flat pancake. Try to do it carefully so crepe stays flat on the plate. I put about a TBSP almond butter, strawberries and raspberries. Then I kind of rolled the crepe like a real crepe, all rolled up. I then put a little more almond butter on top, added more sliced strawberries🍓, some raspberries & blueberries. Voila! This is 3 points on #WWfreestyle for the approximate 1 TBSP almond butter. More important than the #weightwatchers points value is the clean eating going on as there is ZERO flour, sugar or dairy. Not using #sugarfree maple syrup is even better because of ZERO sugar alcohols. .
I weigh in Saturdays (why does my phone put an apostrophe on weekdays?! So annoying and grammatically incorrect) but progress-checked-in with the scale this morning since quitting dairy/flour/sugar and I cannot believe I'm down 2.6 lbs already since Saturday🙌🏼👏🏻👏🏻). The BEST part about eating like this is that mental clarity is vastly improved🎉🎉🎉❕❕❕

Recipe from @ohsheglows • Really working on getting back to my old anti-inflammatory diet ways. Often when I'm transitioning back to that, my body craves comfort foods. It wants cheese and bread and I've learned it's important to listen to the body and try to give it what it wants rather than avoid the foods all together.
I set the intention to treat my body with more more kindness during the new moon 🌙 eclipse, food being the number one priority until I make it a habit again.
How beautiful is this little bunch of #kale ? I grew this in my tiny garden.. And honestly, it didn't take much effort 😛. Gardens are so much fun. Last year I grew tomatoes, cilantro, basil (sooo much basil), carrots, jalapeno peppers and even a tiny watermelon.. It was taken over by worms 😭 but it was still fun to watch it grow. 🌱 This year we are growing papayas. Have you ever tried growing a garden? It's not as difficult as you may think. This year I'll try to write a blog post about the things I learned from my first year in #organicgardening . 💚✨ Also.. Dehydrated kale chip recipe coming soon. ✌Happy Tuesday fam bam.
It my not look like much but there are a lot of great pieces to this picture. First, be sure to not overlook your local farmers market. The portobello mushroom here, along with the pepper, were unbelievably tasty and super cheap! Second is that variation of colors across the veggies. Different colors mean different nutrients and minerals; getting the different varieties is important to overall health! And finally number three - the importance of taking the time to enjoy the process of creating a meal for yourself. There is something zen-like about knowing everything that is in your meal and creating something delicious and nutritious for yourself! What did you find at your local farmers market this week?
Meal prep Monday, consisted of home made vegan enchiladas (zucchini, sweet potato) Mexican quinoa (mixed some enchilada sauce in the quinoa, & sauteed onion) and vegan refried beans. 3 lunches,. 1 dinner. Tonight we do tofu Tuesday.
