💪🏽Having lunch on the go today. Ikea meatballs, green beans, and zucchini laid all on top of a layer of cauliflower rice. Cauliflower rice is a great substitute for rice if you don’t want all the carbs.
1️⃣Spray a cooking tray with extra virgin olive oil and cut the tips off of the green beans
2️⃣Throw everything on the tray and sprinkle some seasoning all over the veggies. I used garlic, black pepper, and Himalayan salt.
3️⃣ Preheat the oven to 350F and once it’s ready, throw everything in there for about 12-15 mins or Until my green beans are blackened.

Ce soir, je partage avec vous une photo des délicieuses petites barres que j’ai réalisées hier. ✨ Elles sont à base de banane, et sont composées d’une première couche aux épices (cannelle, gingembre) et d’une deuxième couche au cacao, entre lesquelles on retrouve des rondelles de banane. 🍌 Encore une fois, une recette totalement improvisée à partir de bananes bien mûres ! 😀 J’ai également utilisé un reste d’aquafaba (jus de pois chiches) que je n’ai pas monté en neige mais que j’ai simplement incorporé tel quel à la recette, comme pour remplacer le lait végétal en quelque sorte. 🌱
Je ne m’attendais pas forcément à grand chose en réalisant cette recette… 🎈 Mais alors, qu’est-ce que j’ai adoré !! 🌟 Un gros coup de coeur pour ces petites barres ! 💓 Incroyablement moelleuses et tellement légères, avec des morceaux fondants de banane au centre… Très parfumées, le mariage des différentes saveurs est juste un pur délice. 🌈
Comme quoi, les improvisations même les plus “expérimentales” peuvent donner de très belles surprises ! 🎁 En tout cas, cette fois-ci, j’ai clairement été conquise. 😇

I think a lot of people don't really get what I'm doing here. I mean, I know that I'm no professional. I know there are girls with way better bodies, who can lift way more, eat way healthier, have with way more discipline, etc. I know.
But i'm not here to post pictures of my body to for validation. Not to post wellness tips because I think I know more than anyone else. Not to post pictures of pretty food that frankly I don't always have time to make. Not at all.
Honestly, I started this account as a personal outlet. An unwritten promise to myself to change my mindset on food, body image and self worth. And almost 2 months later (since I've been taking it seriously) I can honestly say it has.
I have learnt so much and met so many amazing and like-minded girls - it is honestly overwhelming.
I didn't realize how disordered my thoughts were until they no longer were. Treating calories like the enemy and obsessing over losing weight like I was - wasn't healthy, enjoyable or frankly sustainable. It's toxic and super f***ed up.
There's a huge stigma that you can't have an eating disorder if you don't actually *look* like it. Cycles of restricting, binge eating, and running on the treadmill for hours the next day (until a few days later you just eat everything in sight again) really SUCKS. And IS a serious problem.
So what I'm trying to say is that I started this account to hopefully show that there is more than one way to lose weight. More than one way to achieve your dream body. More than one way to be confident.
It really still is just a personal outlet but it makes me so happy to think that I've at least helped one other girl. Ya I'm cheesy.
Although I'm excited to continue you my fitness "journey" and for new opportunities this account may bring. That's not the point. The point is, this has really helped me.

Afternoon food! Lacinato kale from the garden, leftover mango-black bean salsa, and carrots from @steadfastfarm (they're like candy!) Almost raw, except for the beans. Taking my @coconutbowls to the savory side! #bowl
Too good not to share twice 😜 And there we have it. Not at all bad if I do say myself. 😍 Left over (#vegan ) #spaghetti#bolognese (thank you @tescofood for the awesome veggie mince for such an occasion). If you’re #slimmingworld -ing then rest assured this is 2 #syns only. 1 ½ for the @oatly Creamy Oat Fraiche and ½ for a little olive oil in my tomato sauce 😘 For a quick-ish midweek dinner on this particular humpy #humpday I took much needed inspiration from the very lovely Karen Coakley of @kenmare_foodie who repurposed some Spag Bol earlier this week. It’s a simple layering of bolognese, sliced aubergine, sliced tomatoes, and I went off piste here to add some @oatly and a good dusting of bread crumbs (which can be from your #hexb#healthyextrab ). Pop in an oven at 220/240C for 25 mins or so at the same time as our #slimmingworldchips . Garnish with extra speed in the form of a wee salad and Bob is your frikkin uncle 👍👌🏻Your hump day dinner is served x
Whipped up some banana sweetened granola last night after my fam accidentally bought double bananas by accident 🙈 What I like about this is that it’s very subtly sweet, so if you’ve got more of a sweet tooth then you might want to add some honey before or after cooking. You can even enjoy this as cereal since it’s not laden with oil or sugars:)
Ingredients: - 1/2 cup banana, mashed (3 small bananas for me) - 1/2 c unsweetened applesauce (I used some homemade)
- 5 T but butter (I used a coconut and almond butter mixture)
- splash of almond or vanilla extract
- 3 c. oats (I used @naturespathorganic gf)
- cinnamon, to taste
- optional add ins: dried fruit, hemp seeds, chia seeds, cacao nibs, seeds, nuts
Directions: Preheat oven to 325 and line a baking sheet w parchment. Combine all ingredients except oats&toppings in a microwave safe bowl and heat for 1:00, or until everything is warm and melts. Add in the oats and desired add ins and then spread onto baking sheet. Batter will be pretty sticky and will be one sheet. Cook for 20 minutes, then take out of oven and break into pieces with a spoon to desired chunk size. Return to oven for another 10-15 mins or until firm and golden.
Alternative option: place batter in a square baking pan (8x8), slice into granola bar shapes, then bake for 35-45 mins! Easy, healthy, homemade granola bars!
