My salmon and sesame poke bowl sparked interest from some of you, so here is the recipe to try yourselves! Inexpensive, fresh and easy to prep. Perfect for work lunches 👌🏼 Enjoy!
Salmon and sesame poke bowl
Cooking time: 20 mins
5-10 snow peas, remove stems
5-10 sugar snap peas, remove stems
1/3 cup frozen edamame beans
1 small salmon fillet
1 serve Hakubuku Soba buckwheat noodles
1 tablespoon sesame seeds, toasted
1 tablespoon sesame oil
Salt and pepper to taste
Pickled ginger to taste
Bring one small and one medium pot of salted water to the boil.
In the small pot, poach the salmon until cooked to your liking (3-5 mins). Refresh in cold water to stop the fish from cooking further. Set aside.
In the medium pot, blanch the vegetables for 1 minute. Remove from pot and refresh in cold running water until cool (keeps the vege crispy). Set aside.
In the same water add the soba noodles and follow instructions on packet.
Strain in a colander and refresh with cold running water to prevent them from clumping and sticking together.
In a bowl, combine the noodles, half the sesame seeds and half the sesame oil and season to taste with salt and pepper. Do the same with vegetables and place on top of the noodles.
Finish off by flaking the salmon over the top and adding pickled ginger to taste.
Meal prepers: Prep no more than 2-3 days and store in the fridge for optimum freshness.

👉🏼1 xícara de farinha de amêndoas (usamos da @holynutsbrasil) 👉🏼50 g de queijo parmesão ralado fino
👉🏼3 colheres de sopa de água
👉🏼3 colheres de sopa de nata ou creme de leite sem soro
👉🏼1 colher de sopa rasa de fermento quimico em pó
Modo de preparo:
Bata os ingredientes no liquidificador, acrescente o fermento e bata para incorporar. Coloque a mistura em uma forma retangular (de bolo inglês) untada. Por cima salpicamos chia. Asse em forno preaquecido a 200oC, por 30 minutos ou até dourar.

Today's dinner was going to be spent outside but it turns out I wasn't the only one that was hungry.
Inside my bowl of deliciousness: cooked beans with some seasonings, whole grain rice, steamed broccoli, peas, and a fresh yellow pepper!!
Lentil-Red Wine Stew served with Quinoa. You could use white wine too! Also any variety of veggies that you have on hand will be fine, but mushrooms really soak up the wine goodness. Wine makes everything better🍷#goodfriday#nomeat#lentoptions
😃We still love a good #smoothiebowl 👫🥒🥦🍏🍓🥥🌸 But we just don’t have them as often (used to have 4-6 of these a week) 🤩 We’ve also been putting more and more veggies, oats, nuts and seeds into them for a higher protein content and less sugary fruit...but still put some yummy berries in there because...suga 🤤 ⬇️For this one we used:
2 cubes of frozen kale
1/4 cup frozen blue berries, @oob.organic
1 whole fresh banana
1 Tbs of Lecithin Granules @lotuspantry
1/2 cup of almond milk @almondbreezenz
1 Tbs of cocoa powder @huckleberrynz
1/2 a cup of water
Toppings: almonds, pumpkin seeds, sunflower seeds, banana chips and @vogelsgranola

When will I learn? Yesterday I made the mistake of thinking I was invincible, again. That I was feeling pretty good, again. Then I did a 9 hour work day. When will I learn?
Last night when I finally sat down to stop, my body screaming NO at me. My MS hug flared right up and my legs were agony. I’m all for trying to be as positive as I can, but when I woke up this morning with a massive headache and fatigue as well. This was after just one, 9 hour day. I’m not going to lie, I am super frustrated. Who ever thought this active vs. rest balance thing would be so difficult to master. I think about 6 hours is my limit and that seems so silly to actually write but I guess that’s all part of this thing called healing.
So it looks like today is a rest day. I’m just taking it easy and enjoying this beautiful purple smoothie because how could that not cheer you up a bit!! Maybe I’ll try to finish writing my diagnosis story so I can finally share it with you? 💜
Does anyone have a significant other who’s not as health-conscious? Mine deserves all the props for being super supportive and always willing to try new things, healthy things, and often liking them! Well, bowl week has worn on him. He’s been craving chips and cheeseburgers, so I scrapped the bowl I had planned (an amazing array of broccoli, greens, edamame, avocado...) and had this, which I shall call the Compromise Bowl. It’s basically my sweet potato nachos in bowl form (and this is an easier way to do the sweet potatoes and get them to bake evenly). I tossed cheese on his and skipped the avocado, and we’re both feeling good about not having just ordered a pizza—nutritious, but still close enough to that indulgent food!

BOX JUMPS 💪🏻 Let’s talk about something I hate doing: cardio. Steady state cardio is something I have never enjoyed, and for me, if you don’t enjoy it, why do it?
I still find it very important to keep my heart rate up during exercise but like to do it in other ways, like box jumps or jump rope.
Try this circuit for your next workout:
1️⃣ goblet squats x 10
2️⃣ box jumps x 10
3️⃣ hammer curl w/plate x 10
4️⃣ Russian twist x 30
5️⃣ shoulder press x 10
I used to absolutely dread side planks, but now they’re one of my favorites! 👏🏻 1️⃣ great for core stabilization and oblique work
2️⃣ great for shoulder stabilization
3️⃣ Try adding a kettlebell to increase the demand on your core and to increase the need for shoulder stabilization!
4️⃣Make sure to keep your arm straight up, in alignment with your stationary shoulder to avoid injury (still workin on that one) 😜
