Meal: Spinach & Ricotta Stuffed Peppers

Ingredients:
2 tablespoons oil, divided
¾ cup diced onion
3 cloves garlic
3 cups packed fresh baby spinach, chopped (about 6 ounces)
Salt & pepper, to taste
2 yellow bell peppers, cut in half, seeds removed
1½ cups ricotta, part-skim
6 tablespoons Parmesan cheese, grated
10 ounces container grape or cherry tomatoes

For the Garnish:
Parmesan cheese, grated
Fresh flat parsley or basil
.........
Instructions:
Preheat oven to 425.
Place tomatoes in a 9x13 pan and drizzle with ½ tablespoon olive oil. Salt and pepper. Set aside.
Heat remaining 1½ tablespoons oil in a skillet over medium heat. Saute onion until translucent and soft. Add the garlic and spinach and cook until wilted. Season with salt and pepper to taste.
Mix ricotta and Parmesan together. Add in the spinach mixture and stuff into peppers. Sprinkle with more Parmesan cheese and arrange in the pan with the tomatoes.
Bake for 25-30 minutes or until lightly browned. Garnish with more Parmesan and some fresh parsley or basil.
Serve over rice, orzo, or quinoa.

Ingredients:
Salad:
8 Cherry Tomatoes
1/4 of a Cucumber
2 Basil Leaves
1/2 cup Dried Pasta
1/4 cup Kalamata Olives
1/2 cup Beans (of your choice)
1/2 cup Spinach

Steps:
1. Mix together the dressing ingredients and place in the bottom of the jar
2. Cook the pasta and add this next.
3. Quarter the cherry tomatoes and chop the cucumber into chunks. Shred the basil leaves and mix these all together, add these as the next layer.
4. Add the olives.
5. Add the beans.
6. Add the spinach on top.

Store in the fridge for up to 3-4 days in a glass jar. Mix all the ingredients together just before serving.

Still struggling to say no to sweet treats such as chocolate and biscuits :( I'm in a place where I'm slowly putting weight on but I'm not stopping myself from sabotaging myself maintaining my weight. .
I think that the amount if treats wouldn't be a problem if I exercised more. I really need to start up my walking again and introduce different exercise, rather than just yoga. .
This is what I know I need to do but now I need to find the time and energy to just get it done!

Breakfast and Lunch - smoothie (spinach, bananas, raspberries, and flaxseed)
Dinner - I used my leftover lentil soup as a dip for my organic yellow chips.  Yummy.  I added green olives and pico de gallo.  This was good and filling. Sorry for pics, not so appetizing.  #nomeat #plantbasedlifestyle

I was very busy with the dogs yesterday and needed to hook up a QUICK but YUMMY lunch so I came up with this delicious recipe 😋

It's easy, quick & super tasty 💚-
🔷Ingredients (Serves 2)
🔹For the Pasta
Pasta ( wholegrain if possible & best option is gluten free)
Olive oil
Himalayan pink salt
🔹 For the Pesto
1/3 cup Dessigated coconut / fresh coconut
1/3 cup fresh basil leaves
2-4 cloves of garlic (according to taste)
1,5 tbsp Chana Dal (soaked for 15min)
2 medium sized tomatoes
1 green chilli and/or red chilli powder
1 tsp sambar powder/masala powder
Pink Himalayan salt
Optional: lemon juice
🔹For frying (optional stage)
1 Onion 
Olive Oil/ Groundnut oil/ Coconut oil-
🔶 Recipe
🔸Boil pasta with salt and 1 tbsp olive oil
🔸Combine all ingredients for the Pesto  in a grinder / food processor / mixer (whatever does the job)
🔸Heat oil in a pan, fry onions until golden brown then add the grinded pesto & fry for a few minutes
🔸Add boiled pasta & mix together

Finally made protein pancakes for dinner tonight after seeing them all over Pinterest & Insta 🥞 These were made with only 4 ingredients: 1/4 cup of flour, 1 egg white, 1 container of banana cream light Greek yogurt, & a splash of almond milk. Topped with some banana slices 🍌, lite maple syrup, & graham cracker crumbs. They were super yummy 😋Next time, I would a bit more almond milk & another egg white.

Celery soup
Time: 45 min
Level: easy
Makes 4 servings

You’ll need:
* 1 chopped head of celery
* 1 chopped large waxy potato
* 1 chopped medium onion
* 1 garlic clove
* 50 oz water
* 2 tbsp olive oil
* Salt
* Sour cream

Heat olive oil in a large pot over medium heat. Add onion and season with salt.
Cook, stirring, until onion is tender. Add garlic, celery and potato. Saute 5 min then add water and simmer until potatoes are tender 20-25 minutes. Transfer to the blender, season with salt and beat until creamy. Serve warm topped with sour cream.#veggies #vegetarianfood #vegetarian #nomeat
