Not the best quality photo as I snapped it with my tablet. Tonight's dinner was zoodles bolognese. I can't tell you how delicious this was. I tossed my zoodles in some garlic I had sauteed and crisped up in a pan and topped with homemade bolognese, fresh tomato, green onion and a sprinkle of parmesan. Instant quick lunch here. Had a big bowl of basic salad in the fridge, so scooped out a heap & having it with some ready roasted chicken I picked up from Costco earlier. 🍗 Not my usual choice because I prefer pastured and Organic but this still beats take out. Fast food doesn’t have to be bad food.
It's a waffle experiment kind of morning!!! Testing out a new paleo & vegan waffle recipe that is super tasty. Crispy, chewy and fluffy all in one. A few more tweaks & it will be ready to share with you 😍 topped with coconut oil, peanut butter, puréed raspberries & dark chocolate shavings. You guys will love this one 😋

Dark Chocolate Kahlua Mousse Cakes... experimental mousse cakes I baked from a treasured old cookbook 'Indulge' by Claire Clark a while ago. I changed quite a few things and was unsure if we'd have dessert! Gladly we did ...see! Deep, chocolaty, sinful, rich with Kahlua undertones, coffee whipped cream & cocoa nibs to garnish, these little mousse cakes were delicious.
Got back in the kitchen for the first time in a while. Putting music on always gets the motivation pumping! Also had a coffee today which prob helped. Just finishing making 2 x fathead pizza bases and 2 x lots of crackers to keep on hand 🧀 Not exactly a protein focus but I’m feeling kinda paralyzed by that lately, so just gotta do what I gotta do 🤷♀️
Let me just say these little bites of crisp cheesy goodness are a game changer for me. Oh my lawrd! Talk about yummy and versatile. Whisps cheese crisps come in several flavors and can be put in salads and soup. Although tiny you can dip these and let's not forget that if you want you can feel free to cram them directly into your mouth from the bag. Uhm... yeah I may have done that the moment I got into the car, hence the two open bags.
