Hummus pasta! With chickpea/lentil pasta, portobello mushrooms, shallots, red pepper, tomatoes, & capers. Made this up after seeing a hummus pasta recipe on this fantastic zero waste/vegan page that I follow. After eating poorly this past week (I was dog sitting) I’m back at cooking and whipping up some awesome healthy dishes. Made this along with a beautiful salad. Anyone else feel super gross when they eat a lot of packaged foods? My body starts to crave water and fresh veggies and fruits. I can tell that I’m not as energized and just feel crappy overall. So here’s to being back on track and feeling better! I also re downloaded this great food journal app, YouFood. Helps me hold myself accountable in a great community setting. ❤️🌿

So I was so excited about trying out the paella recipe that I only bought the ingredients for that meal ☺️. Thinking up what to have for dinner was tricky. After standing in front of the open fridge and cupboards for a long time, I came up with this.
I put 2 x balls of tagliatelle to boil. Then added sliced garlic and half a chopped red onion to a hot pan with a tablespoon of butter. Once the pasta was cooked, al dente, I added it to the pan with garlic and onion. To season I used dried basil, thyme and rosemary as well as cracked black pepper and a squuze of lemon juice. I then tore up a couple of handfuls of spinach and added it to the pan and stired. Once the spinach was wilted i took it off the pan.
I wish I could take credit for the chicken, but it was left over from my Nando's takeaway.
Altogether it was delicious.

I made meat lasanga, margarita, and buffalo chicken. Using wonton wrappers these are a beautiful and delicious hand held app! I'll post the recipe on my website soon!
Sophie and I made basil chocolate cake today! 🍫🌿 A surprisingly good combo. About a month ago I tasted the two together by accident (pesto and dark chocolate), and was taken aback by the flavor. It has a similar effect to mint with chocolate... The cake came off really well, especially along with plain Greek yogurt and a basil garnish 😋 Afterwards we read aloud the entirety of C.S. Lewis’s The Great Divorce... such a wildly good book.
