"Thought I’d share my first go at a Keto pizza 🍕 I mean, actual PIZZA!!!!⠀
Base made with buffalo mozzarella, goat cream cheese, almond flour, egg and S&P. Toppings were more buffalo mozz, a homemade tomato sauce, kalamata olives, and a selection of those chargrilled veggies in oil that Lidl do in jars. I’m allergic to cow’s milk so subbed the mozz and cream cheese in the recipe for ones that I can tolerate.⠀
Oh and a salad. Some leaves, cucumber and olive oil with a spoonful of the purple coleslaw I made last night (shredded red cabbage and red onion with mayo and lemon juice).⠀
Pretty much the whole day’s fat, carb and protein “allowance” but it’s the only meal I’ve had today as I just haven’t been hungry. Chances are that’ll keep me going until this time tomorrow, when I get to have the other half 😈⠀

Let us start our journey with a bright representative of the Apulia region in the Southeast of Italy. Being a younger sister of mozzarella, burrata has a softer and gentler taste, it is more stringy. It has an outer shell of solid mozzarella filled with creamy mass. It is traditionally made with buffalo milk (often diluted with cow milk).
🍽Serving: best served on banana leave or, if you are feeling particularly adventurous, you could find Asphodelus leaves which will give a special aroma to the cheese.
🎨Pairings: rucola, avocado, beans, beetroot, garlic, honey, lemon, pear, fig, melon, peaches, nuts. However, you can simply drizzle it with olive oil, balsamic, add some seasoning and serve as a starter; goes especially well with cherry tomatoes, basil and olive oil.
🍷Wines: soft white or rose wines, young red wines.
🏵Type: fresh soft cheese.
⌛️Aging: served fresh, keep in a fridge, consume within 48 hours.
SPAGHETTI CON CARCIOFI E WURSTEL:2wurstel,2carciofi,metà scalogno,2 cucchiai di olio e.v.o.,sale q.b.,300g di spaghetti.
PREPARAZIONE:far soffriggere metà scalogno con l'olio e aggiungere i wurstel tagliati a pezzetti e i carciofi precedentemente lavati e sminuzzati.Lasciare cucinare per circa 8/10 minuti.Nel frattempo portare a ebollizione una pò d'acqua,salare e cucinare gli spaghetti.A fine cottura versare la pasta nella padella e lasciare insaporire.Aggiungere a piacere mozzarella.
