Butterless Choc Chip Cookies 🍫 Ingredients 🍫
3/4 cup liquid form coconut oil
2 tsp. vanilla extract
3/4 cup sugar
3/4 cup packed brown
2 1/2 cups flour
1/4 tsp. kosher salt
1 tsp. baking soda
1 heaping cup chocolate chips 🥄 Method 🥄
Preheat oven to 375 degrees Fahrenheit.
Combine liquid coconut oil, vanilla, eggs, sugar, and brown sugar and whisk to combine.
Add flour, kosher salt, and baking soda to bowl and stir until you have a smooth dough.
Fold chocolate chips into dough.
Line a large baking sheet with parchment paper.
Scoop dough onto the baking sheet in small balls.
Bake cookies at 190 degrees C for 9-12 minutes until lightly browned.

Mini banana pancakes. These are great as a breakfast , dinner or a snack. Filling, naturally sweet, full of grains, fruit and are a great base to add to. fruit,dairy,syrup..you name it!
Simply mash up a banana, add a raw egg and mix with a fork. I used cream of wheat mixed grains appropriate for children 8months plus to bind it. It's like porridge oats but broken up in texture and more grains added. You can add oat flour or regular flour as well..or even make them flourkes!! Mix in enough to achieve greek yoghurt texture. Fry very slowly and gently in a dry non stick pan, until golden on both sides.

Potato & cailliflower mash with creamy spinach sauce and hardboiled egg. 6months plus
Another veggie option. My son absolutley loved it. He ate it two days in a row :) ( use plant based cream for kids with lactose intolerance or cows milk allergy)
Cook potatoes and caulliflower together until tender. I use 50% potatoes 50% caullifloeer for more veggies:) In a saucepan fry off a small onion in one tsp of olive oil. Then added your thawed spinach with the liquid that came out of it. Add a pinch of garlic powder and some low sodium veggie stock. Cook until the spinach is soft. Finish off with 2 tbsp of cream. Season with pinch of salt if youd like.
Mash your potato and cailliflower together. I use a bit of the cooking liquid to loosen it up. Serve with the spinach sauce on top..and an egg on the side.
