Baked Strawberry 🍓Oatmeal Cheesecake 🤤

For the Crust
* 2 cups oats
* 1/2 cup all-purpose flour
* 2 tbsp light brown sugar
* 1/2 cup melted margarine or salted butter
For the filling * 1 can condensed milk * 250g cream cheese, softened
Topping * 6-8 strawberries
Preheat the oven to 350° F. Combine the crust ingredients in the bowl of a food processor. Grind the mixture until the oats are broken into small pieces, about 20 seconds.
Line a 9-inch springform pan with parchment paper on the bottom. Press the crust into the pan.
For the filling:
Combine the filling ingredients in a blender and blend on high until smooth and creamy.
Pour on top of the crust. Add the strawberries.
Bake for 25 minutes.
Chill the cheesecake in the fridge for at least 2 hours.
Nothing feels better and clears the mind, quite like a deep cleanse. Although I really didn’t want to see snow two days into the Spring season, I have to say that this snow day has given me a great excuse to clean and rid our apt of that which doesn’t serve us. It also gives me a way to check in on just how much of our lifestyle is making a major upswing on our carbon footprint. I’m slowly transitioning away from any plastic...that’s my dream. No plastic. Time to tackle room two...

Banana 🍌peanut butter 🥜overnight oats
1/3 cup oats
2/3 cup milk
2 tsp chia seeds
1 tsp honey
2 tbsp peanut butter
Combine all ingredients in a jar. Close the jar and shake until well combined.
Place in the refrigerator overnight and add more milk in the morning if you would like a thinner consistency.
Mixed vegetables with meat in tomato sauce 🍲 ~ MIDDLE EASTERN FOOD ~
For 2-4 people
Ingredients * 1 lbs veal or lamb chopped into medium or small cubes
* 5 cups of mixed vegetables ( corn+carrot+beans+peas)
* 1 1/2 cups yellow potatoes chopped into small pieces * 1 can tomato sauce * 1 pinch of salt
* 1 pinch of black pepper
* 1 pinch of turmeric
* 1 pinch allspice
* 2 bay leaves * 1 pinch cumin * water
* Olive oil In a deep pot, add oil then sauté the onions, add the meat and the spices. Add enough water, bring it to boil for approximately 60-120 minutes, or until the meat is tender. Strain and reserve the meat stock.
In a another pot add the vegetables, meat and meat stock, bring it to the boil for 15 minutes then add the tomato sauce, adjust the salt and leave to simmer, uncovered, for 15 minutes.
Serve with white rice aside.
